Dinner Divas Weekly Menu Plan: Week 7

Dinner Divas Week 7
Dinner Divas is back with another week of awesome recipes!  From meal prep to gyros to steak, we’ve got it all!  Meat eaters and vegans, sweets and sides, we cover everyone’s needs!  This week, I’m super excited about the menu, so let’s get to it!

Here’s how it works:  Every Friday morning, a new meal plan will show up in your email.  It will consist of 5 dinner options, plus 2 extras.  Those two extras could be side dishes, dessert, drinks, etc.   The menus will feature (mostly) healthy, seasonal foods that don’t take all day to prepare.   Getting the meal plan delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead.  With all the springtime activities and summer break right around the corner, I hope this weekly meal plan provides inspiration and makes life a little easier… one meal at a time. 

Starting off the week are these Mediterranean Chicken Bowls from yours truly.  I can’t emphasis enough what a difference meal prep has made for me.  I’m no longer trying to figure out lunches for the week or quick grab & go meals.  This one is my all time favorite!

Dinner Divas

Since you’ve already grilled chicken for the Mediterranean Chicken bowls,  do yourself a favor and make these Grilled Chicken Gyros from Comfortably Domestic.  I need to get my paws around one of these STAT.

This Shortcut Vegan Lahmajoun from Pastry Chef Online is a healthy midweek recipe that won’t take all day.  It’s a twist on a traditional Armenian flatbread with spicy hummus.  Doesn’t that sound delicious?

Girl in the Little Red Kitchen brings us Steak and Potato Salad with Avocado, Tomatoes and Corn.   I could eat this meal Every Single Week.

Wrapping up the week is Shrimp Scampi with Linguini from the Chef Next Door.  This is the perfect way to end the week!

This week, my Curried Cauliflower with Golden Raisins is the featured Dinner Divas side dish.   I can eat this on it’s own as a light dinner, but I usually serve it with grilled steak or roasted chicken.  

This week’s sweet ending are Strawberry Lemonade Cupcakes with Fresh Strawberry Buttercream from Comfortably Domestic.  I would happily take that platter and wander over to a quiet corner…

Happy Friday, Everyone!!!  Are you ready for the long weekend?  I know I am!  As always, we’re here to help with dinner.  It’s a holiday weekend, so that means most of us are grilling and hanging out in the backyard with friends!  Use that extra day off to plan some great meals this week.  We’ve got so much good stuff this week!  I’d love to hear from you & see your creations!  Post a pic using #DinnerDivas and tag @pookspantry!

Next are Green Goddess Shrimp Rolls from Girl in the Little Red Kitchen.   I can’t wait to make these!! They look absolutely dreamy.

This Fried Green Tomato Burger with Goat Cheese & Balsamic from Pastry Chef Online is INCREDIBLE.   I want to sink my teeth into that juicy tomato!

 

It’s back to back burgers with this Cowboy Tumbleweed Burger from Comfortably Domestic.  I love everything about it!

 

Wrapping up the week of dinner ideas is my Pimento Cheese Potato Salad with Buttermilk Chicken Tenders.  Served with Cheddar Dill potato biscuits and spicy honey, this is the epitome of picnic food!

This week, we have TWO desserts for you!  Hooray for sweet endings!

Pastry Chef Online brings us Andes Mint Chip Ice Cream.  Mint chocolate chip is one of my all time favorite flavors, so I am super excited about this!

Wrapping up the week is Girl in the Little Red Kitchen’s Bourbon Blackberry Jam Bars.  She had me at bourbon.  Desserts like this are my go-to.  I can’t wait to make these jam bars!

I am in love with this Pasta with Asparagus and Ramp Pesto from Girl in the Little Red Kitchen.  It is the perfect springtime pasta.

These Crispy Mexican Black Bean Burgers from The Wimpy Vegetarian are a fantastic vegetarian option for burger night! 

The Chef Next Door has Healthy Loaded Sweet Potatoes to get us through Hump Day!

 

Greek Turkey Sliders with Feta Garlic Sauce from Comfortably Domestic are looking pretty tasty! Grilling season is here, people!

Low Carb Cajun Style Sausage with Cauliflower Rice from Pastry Chef Online wraps up the week!  This is a perfect meal for those of us watching our carb intake!

This week we have TWO desserts!  And they are both cheesecake! One is baked and one is not!   What do they have in common?! They are both delicious!

No Bake Lemon Blueberry Cheesecake Parfaits from Pook’s Pantry.  This was a really popular post and once you make these low carb beauties, you’ll understand why.  They are so good and super easy.  They are also lower in sugar and carbs, so no guilt in having one!

Lastly, this Lemon Cheesecake with Shortbread Crust from The Chef Next Door.  I love shortbread, so I’m sure this cheesecake is out of this world!

On to the Menu!

 

Starting us off this week is a Rustic Ham, Asparagus and Goat Cheese Tart from The Chef Next Door.  This recipe was featured on The Chew earlier this week! Congratulations!

 

Next up is my Pork Burger with Hatch Chiles and Pickled Red Onions.  This burger was packed with flavor and just a little heat, perfect for grilling up all summer!

The Wimpy Vegetarian brings us Baked Falafel with Spicy Moroccan Sauce! Don’t these sound fantastic?

 

These Vegetarian Tex-Mex Stuffed Peppers from Comfortably Domestic are colorful and full of flavor! A perfect meatless meal!

Friday night is pizza night!!!  This week, Pastry Chef Online brings us Bacon and Pickled Pepper Pizza.  I’m drooling over this, it is exactly what I want to eat!

Girl in the Little Red Kitchen has the most delicious Prosciutto and Melon Zucchini Noodle Salad.  This is absolutely perfect for summer!  I think it’ll be my go-to summer salad!

Comfortably Domestic wraps it up this week with a totally dreamy Orange Creamsicle Pound Cake.  This is going on my “must make” list.

Dinner Divas Weekly Menu Plan: Week 3

Welcome Back to Dinner Divas! We have another amazing week of recipes to share with all of you! The weather here has flipped a switch and it is getting hot. We’re already experiencing 90+ degree days, so I’m looking forward to lighter fare and refreshing beverages!  Have a wonderful weekend and make it a delicious day!

This comforting meal is exactly what I’d want to eat while snuggled up on the couch with a movie! It looks so good, and has everything I love!  Gnocchi with Chicken Sausage, Brussels Sprouts and Apples from Girl in the Little Red Kitchen

 

Meatless meals don’t have to be boring!  This Asparagus Carbonara with Horseradish Breadcrumbs from The Wimpy Vegetarian  looks absolutely delicious!  Asparagus is in season now, so it’s the perfect time to make it!

 

Chicken with Mushrooms and Thyme from Pastry Chef Online is one of my favorites!  I make something similar at least once a month here! It’s incredibly delicious and it delivers big flavor without demanding lots of time and effort. That’s a midweek win!

 

I have a meatless meal offering this week – my Soba Noodles with Stir-Fried Vegetables.  So good, you honestly won’t miss the meat.  If you have a carnivore in your house that just can’t live without it, shrimp or chicken works beautifully here.  I’ve even done it with beef or pork. This is a solid recipe with lots of room for variations.

 

This Spring Vegetable Tart from Comfortable Domestic would make a wonderful light dinner or a brilliant brunch.  Cooking for Mom next weekend?  I think you found your recipe.

 

This Spicy Succotash with Bacon and Fava Beans would go perfectly with the Chicken on Wednesday.

 

These Lemon Blueberry Scones from The Chef Next Door could be dessert, afternoon snack, breakfast, etc.  I don’t care when you give them to me as long as I get to eat them.

This week, the Dinner Divas put together an amazing meal plan.  We have delicious dinners, a lovely side dish and a beverage!  Spring is in the air and I don’t know about you, but I’d rather be outside enjoying the weather than standing in front of an open fridge at 5:30 wondering what I can pull together that will pass as dinner.   Planning ahead has been a HUGE gamechanger for me and I hope it has for you as well.

DINNER DIVAS – WEEKLY MENU PLAN: WEEK 2

This Meatless Monday meal sounds so delicious, I can hardly wait to have this for dinner!   Mujadara with Roasted Tomatoes and Greens from the Wimpy Vegetarian  is also a perfect side for lamb.

 

Casserole Supreme from Jenni Field’s Pastry Chef Online is the epitome of comfort food to me.  It’s exactly what I think of when I want a “food hug”.

 

Roasted Chicken and Vegetable Sheet Pan Supper from Pook’s Pantry (me!) is one of my “go-to” dinners.  Sometimes, you just need to get dinner done without a sinkful of dirty pots and pans.   Oh, did I mention it’s about a half hour from fridge to table?  Yeah, winner winner chicken dinner.

Bucatini with Spinach Pesto from The Chef Next Door is a great weeknight meal that comes together quickly and is minimal fuss!   This vegetarian dish would also be fantastic with a little grilled chicken on top!

 

Al Pastor Pork Stuffed Sweet Potatoes from Girl in the Little Red Kitchen  I love my Instant Pot and I’m always looking for more recipes that use it.  Combine that with the fact that these are Whole 30 compliant – JACKPOT!!!  I’m over the moon for these!

And now, for the extras!

This lovely Asparagus Gribiche from The Wimpy Vegetarian would be a wonderful brunch item or side to a Spring menu

 

Homemade Lemonade Concentrate from Comfortably Domestic  is my summer dream come true.  Who doesn’t love lemonade?!  You can make pitchers of lemonade for a fraction of the cost of buying it!
