Welcome Back, friends! Our focus this week is salads. I don’t know about you, but just thinking about turning on the oven in the summer makes me sad. The air conditioning is already running 24/7 here and the thought of making it HOTTER in this house is unbearable. Besides the fact that I just spent the past 4 days eating All The Things in front of me, I could use a virtuous dinner.
How it works: Every Friday morning, a new meal plan will show up in your email. It will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Let’s Get to the Salads:
Starting the week off, is my Thai Chicken Salad. In my humble opinion, it is one of the perfect summer dinner salads. I used store-bought rotisserie chicken, which mean no turning on the oven, the food processor does the majority of the work and the spicy chili lime vinaigrette keeps me coming back for more. I love this salad so much and I think you will too.
Next up this week is Comfortably Domestic’s Chef Salad in a Jar. Perfect for lunches, picnics, etc. it is portable and delicious.
Pastry Chef Online’s Mom-Style Macaroni Salad is my childhood revisited. One bite of this and I’m a happy little camper. It’s my favorite version of macaroni salad.
Spicy Chicken Avocado Salad from Girl in the Little Red Kitchen is exactly what I want in the heat of summer. This salad with a glass of something cool = heaven.
Finally, our week comes to a close with this Grilled Pork and Pineapple Salad with Simple Vinaigrette from The Chef Next Door. What a way to end the week! The vinaigrette is light and goes beautifully with so many summer salads.
Now, it’s time to get to the extras. This week, we have an extra that is in theme with salads and a gorgeous dessert that does not require the oven!
Green Goddess Potato Salad from Girl in the Little Red Kitchen is a a lightened up potato salad with a yogurt-based dressing. It’s the perfect side dish for your summer BBQ’s.
Last, but not least, it’s dessert time. Pastry Chef Online’s Cherry Blueberry Slump is the perfect summer dessert when you can’t bear the thought of turning on the oven. With pounds and pounds of berries in my freezer, I know what I’m making this weekend.
