Dinner Divas Weekly Menu Plan: Week 10

Menu planning can be a real drag sometimes.  We all get stuck in rut, including me.  That’s why I started this group with a few of my favorite ladies.  This week, it’s all GRILLED recipes!  That’s right, we are doing theme weeks for the summer! So fire up that grill, make your shopping lists and let’s get cooking.

How it works:  Every Friday morning, a new meal plan will show up in your email.  It will consist of 5 dinner options, plus 2 extras.  Those two extras could be side dishes, dessert, drinks, etc.   The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare.   Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead.  I’d love to hear from you & see your creations!  Post a pic on Instagram, Facebook or Twitter using #DinnerDivas and tag @pookspantry!   I hope this weekly menu plan provides inspiration and makes life a little easier… one meal at a time. 

First up this week is Pastry Chef Online’s North Carolina Muffaletta.   I am a big fan of the Muffaletta and this version of the famous sandwich looks amazing!

Next up are BLAT Hot Dogs from Girl in the Little Red Kitchen.  Susan takes all the components of my favorite sandwich and combines it with a hot dog.  She really gets me.

Shrimp on the Barbie with Chimichurri from The Chef Next Door is fast and easy.  Exactly the type of midweek recipe you want.

Spanish Grilled Bread with Garlic and Tomato from Pook’s Pantry  (me!) is dinner on Thursday.  I know some of you are thinking “that’s not dinner”.  Many, many nights this was my dinner.  Summer heat zaps my appetite and more often than not, I eat a very light meal like this one.  Grilled bread rubbed with garlic and juicy, summer tomatoes.  A drizzle of grassy olive oil and a hefty sprinkling of flake sea salt on top and this my friends, is heaven.  Add a glass of rioja to the mix and we are REALLY talking.

Finally, we close out the week with Comfortably Domestic’s Steak Salad with Chive Yogurt Dressing.  This salad has everything I want in a summer salad: cool, creamy dressing, grilled meat and avocado.

Now, we move on to the extras!  This week Pastry Chef Online brings us her Grilled Vegetable Gazpacho.  I am very excited about this soup.  Gazpacho is one of my summer go-to foods and I can’t wait to try this version.

Finally, The Chef Next Door brings the week to a sweet ending with Grilled Pineapple and Vanilla Sorbet.
