We are kicking of the week with a meatless Monday dish from Pastry Chef Online. Her Vegan Lahmajoun is a tasty way to do a light meal.
Next up is Vegetarian Spinach Lasagna from The Speckled Palate. I love a vegetarian lasagna as much as the next girl and this one is calling my name!
The next recipe on the dinner divas weekly menu is Zucchini Fritters from Pook’s Pantry. I love these zucchini cakes as a side, as a light supper, under a fried egg for breakfast, etc. They are supremely delicious and they’re always a big hit, even with picky eaters!
Comfortably Domestic has a Sausage Stir Fry for us this week. Perfect for those crazy weeknights when you need something quick and easy.
Finally, we end the week with Pastry Chef Online’s Hummus Pinwheels. Great for snacking or a light dinner after a long week.
Now, we have a couple of sweet treats to wrap up this week’s dinner divas menu plan.
First up is my Strawberry Cream Cheese Icing. This is a light, billowy icing that is perfect for spreading on top of cupcakes, cookies, poundcakes, even muffins. It tastes like real strawberries because it’s made with real strawberries!
