Dinner Divas Weekly Menu Plan: Week 17

Dinner Divas
Dinner.  How many of you have stood in front of an open refrigerator trying to figure it out?  You’re not alone.  In other words, I’m guilty of this as well.  It’s not always easy and therefore, we tend to get in a rut. Our primary goal is to make dinner a stress-free endeavor by giving you menu ideas every week.   I fell off the wagon myself and now, I’m trying to get organized again.  I know many of you have kids back in school, which means that organization is paramount. So, let’s do this!

How it works:  Every Friday morning, a new meal plan will show up in your email.  It will consist of 5 dinner options, plus 2 extras.  Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare.   Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead.   I’d love to hear from you & see your creations!  Post a pic using #DinnerDivas and tag @pookspantry!   I hope this weekly menu plan provides inspiration and makes life a little easier… one meal at a time. 

Let’s Cook Dinner!


First up this week is my Espresso Bourbon Glazed Steak & Grilled Sweet Potatoes.  The next time you throw a steak on the grill, make this simple glaze to brush on while the steak is cooking.  It will up your grill game by leaps and bounds!  Meanwhile, those sweet potatoes are hanging out right next to your NY strip.  No oven required.
Dinner Divas Steak

Here’s a new way to serve of the bounty of summer veggies: Comfortably Domestic’s Summer Vegetable Gratin Casserole.  My garden gets out of control at the end of summer, this is a perfect way to use up all those tasty veggies.

Next in the line up is Pastry Chef Online’s Spicy Chicken Guacamole Sliders.  You know, football season is almost here and these little sammies would be perfect for game day!

It’s stone fruit season, so now is the perfect time to try these Pork & Apricot Kebabs from Girl in the Little Red Kitchen.  Summer grilling is the best, especially when it looks as good as this!

 

Finally, we are ending our week with Mexican Stuffed Pepper from the Chef Next Door.  After a long week, this is the kind of meal I want.

And now, we finally get to the sweet ending.   This Roasted Strawberry Balsamic Ice Cream from Girl in the Little Red Kitchen just screams summer to me.
