Welcome Back! This week on Dinner Divas, we have some amazing food! We hope that planning your weekly menu has helped to make life a little easier. When I plan my menus instead of “winging it”, it keeps my weekly food budget in check. Planning ahead saves time and money, plus it takes the guesswork out of dinner. That’s a win in my book.
How it works: Every Friday morning, a new meal plan will show up in your email. It will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead. I’d love to hear from you & see your creations! We begin the week with Mexican Chicken Tortilla Casserole from The Chef Next Door. A casserole is a great start to the week, especially if you have leftovers for lunch the next day.
Next is Coconut Curry Corvina on Thick Cut Potatoes. For those unfamiliar with corvina, it is a firm white fish similar to sea bass. It is not at all “fishy”, it has a buttery texture and is absolutely delicious. The curry sauce is not spicy, and it is complemented by the coconut milk and the potatoes. This is honestly one of my all time favorite dinners.
Next up, we have Feta Stuffed Lamb Burgers from Comfortably Domestic. Shape the burgers in the morning (or night before) and there will be even less to do that night!
Coronation Chicken or Curried Chicken Salad from Pastry Chef Online is the next to last recipe this week. I love light dinners like this when it is so warm outside. The added bonus is having extra for lunch the next day.
Last, but certainly not least is Girl in the Little Red Kitchen’s Corn Cakes with Shrimp and Tomatoes. This dish screams summer to me. It is the perfect way to end the week.
Because one isn’t enough, we have two desserts this week. The first dessert is my Blueberry Buttermilk Bundt Cake. This cake is one of the most popular recipes on my blog. Last week, I made it three times. I also switched the blueberries for cherries in one of them and it was wonderful.
Finally, we wrap up the week with this Coconut Cream Pie Milkshake from The Chef Next Door. I am a fan of coconut and I love a good milkshake, so I think this will be in my future very soon.
