Dinner Divas Weekly Menu Plan: Week 19

Dinner time can be a challenge. As hard as we try to get organized, sometimes life gets in the way of our plans.  Because even the most organized person gets derailed from time to time, we are here to help.

How it works:  Every Friday morning, a new meal plan will show up in your email.  It will consist of 5 dinner options, plus 2 extras.  Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare.   Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead.   I’d love to hear from you & see your creations!  Post a pic using #DinnerDivas and tag @pookspantry!   I hope this weekly menu plan provides inspiration and makes life a little easier… one meal at a time. 

Let’s Cook!

First up this week is this gorgeous Caprese Tart with Olive Oil Crust from Girl in the Little Red Kitchen.  As soon as I have another batch of tomatoes to use up, this is the recipe I’m making.

Next is the “surprise recipe”. This week, we are each adding another recipe of our own.  I’ve pulled this one from the vault.  It is a Spinach, Nectarine and Blue Cheese Salad with Fig Vinaigrette.  The photos are bad, but the recipe is delicious! In other words, please trust me and overlook the horrid pictures.  If you like salads, this one is really good.

Stuffed Tomatoes – Two Ways is the midweek recipe.  The Facebook group spoke… and I listened.  I asked for input of which recipes they wanted to see and before I could blink, stuffed tomatoes had the top spot.

We are almost to the end of the week and Comfortably Domestic’s Coconut Chicken Tenders with Spicy Grapefruit Marmalade  are just what I crave after a long week.

Finally, we wrap up the week with The Best Creamy Macaroni & Cheese Ever from Pastry Chef Online.  For those of you who don’t know, mac & cheese is my absolute favorite food on the planet.  I would love to be alone with a bowl of this and binge some Netflix.

And now, on to the extras!

Girl in the Little Red Kitchen is back with her Peach Pimm’s.  If you’ve never had Pimm’s, do yourself a favor and make this!

Lastly, Comfortably Domestic’s Soft Chocolate Chip Cookies are the perfect weekend treat!
