Dinner Divas Weekly Menu Plan: Week 38


Welcome back and Happy New Year! This week on Dinner Divas, we are getting back into the swing of things after a crazy holiday season. We took a week off while we were all celebrating, but with the arrival of the new year, we are back on track.  It was a wonderful few weeks of celebrating (and INDULGING!) with friends and family but now we are returning to our normal routines and that means planning for DINNER.  Like most of the country, we seem to be in a deep freeze which leaves us craving comfort food.  On the other hand, many of us have that “eat healthier” resolution for the 3,592 time. At least it feels like that many times. So, let’s get to the meal plan.

Here’s how it works: Every Friday morning, a new menu plan will show up in your email. It will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead. I’d love to hear from you & see your creations! Starting off the week is Chef Next Door’s Red Wine Pot Roast with Mushrooms.

Next this week is something special.  My Porcini-Crusted Beef Tenderloin with Chestnut Stuffing was served during the holidays.  It looks like you spent hours and hours to make something so elegant, when in fact, it’s actually pretty easy.  I love recipes like this one for special occasions.  Valentine’s Day is only a month and a half away, so tuck this in your back pocket for a special evening at home.
Dinner Divas week 38

Comfortably Domestic comes to the rescue with her Minestrone Vegetable Soup.  All I want right now is comfort food to chase the chill away and this is EXACTLY what I’m craving.

Breakfast for Dinner, anyone?  Pastry Chef Online has you covered with her Hawaiian Roll French Toast Muffins.  These would be a great weekend treat, quick “on-the-go” breakfast or after-school snack too.

Last up this week is this Curried Tomato Lentil Soup from Girl in the Little Red Kitchen.

Now, we move onto the extras.  We have a dessert, as always and something a little different.

This week, we have a nibble to share.  Just in time for football parties; you’ll want to have a few bowls of these Easy, Spanish-Style Marinated Olives placed around for guests to nibble on. Are you a guest at a party?  Don’t show up empty-handed.  A homemade hostess gift is always appreciated.
