Welcome back to another weekly menu plan with the Dinner Divas. On the menu this week, we have everything from nibbles to sweets. We have vegan dishes to meals for meat-loving families. This weekly menu has something for everyone and we hope you like it!

Here’s how it works: Every Friday morning, a new menu plan will show up in your email. It will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare. THE WEEKLY MENU:
The Speckled Palate starts off the week with her Shredded Applesauce Chicken Sliders with Brussels Sprouts Apple Slaw. These tasty little sandwiches would be perfect for gatherings of any sort. I would pack these up for a picnic or take them to potluck parties. And that slaw on top? What a delicious way to sneak in some veggies.
Next on the menu this week is Comfortably Domestic’s Southwest Steak Stir Fry. When I am running behind or I forgot to pull something out for dinner, stir fry is my “go to” and this version looks absolutely delicious.
My Easy Indian Vegan Chickpea Curry is our midweek recipe. I made this a few weeks ago for the first time and I’m happy to report that we ate leftovers for lunch for two days which really saved me during an especially busy week. This vegan curry is delicious as is, but if you prefer to add shrimp or chicken, it is fantastic with those additions as well!
Coconut Chicken Tenders from Comfortably Domestic is the next recipe on the weekly menu. Perfect for game day snacks, weeknight dinner or feeding a crowd, these chicken tenders are great for any occasion.
Finally, the last dinner we have this week is from Pastry Chef Online. Her Spicy Smoked Pimento Cheese is a great appetizer or “light” dinner when you just want to snack on something instead of having a big meal. I would also stir some of this delicious spread into a bowl of pasta and be very happy with that for a meal.
The first sweet this week is Old-Fashioned Vinegar Pie from Pastry Chef Online. I am fascinated with this recipe. The concept of vinegar pie is new to me and I can’t wait to try it.
Our last recipe this week is from The Speckled Palate. Her Bourbon Pecan Brownies are calling my name! I absolutely LOVE a good brownie and you know how I feel about bourbon, so I know these will be a repeat performer at our house!
