Welcome back to the Dinner Divas Weekly Menu Plan.  This week, we have a few recipes for celebrating Cinco de Mayo and the Kentucky Derby, as they are both fast approaching.  Don’t forget to PIN them to save!  Enjoy!

Dinner Divas Weekly Menu:

Starting out this week is Pastry Chef Online’s Smoky Beef Carnitas.  This is exactly what I’m craving today.  This recipe gets bonus points because it’s made in the Instant Pot. I am always looking for new recipes for the Instant Pot, it really is the best for getting meat super tender in a hurry.

Next up is The Speckled Palate’s Instant Pot French Onion Meatloaf.  Another reason to have an Instant Pot!  I can’t wait to make this one.

Our midweek meal is brought to you by Comfortably Domestic.  Her Chicken and Mango Quesadillas would be a tasty addition to your Cinco de Mayo menu.

Continuing with our Dinner Divas weekly menu is my Sheet Pan Honey Chipotle Salmon.  Slightly spicy and sweet honey chipotle sauce transforms salmon into something special for a delicious and healthy midweek meal.  Roasted in the oven, this salmon leaves your hands free to get on with other things.

Finally, we end the week with pizza.  Pastry Chef Online’s Bacon and Pickled Pepper Pizza.  I love banana peppers on my pizza and bacon, so this makes me Very Happy.

Now, we are on to the good stuff! 

Apparently, The Speckled Palate and I were on the same page.  We both have a version of a mint julep for you this week.  I have been brewing kombucha (if you follow me on Facebook, you’ve seen my kombucha adventures!), so I wanted to make a cocktail with my homemade brew.  While I used what I brewed, you don’t have to.  You can grab a bottle at the store and use it to make this drink.  It will be just as tasty!

My Mint Julep Kombucha Cocktail is seriously one of the best drinks I’ve ever made.  If you are a bourbon lover, this is for you!
