Dinner Divas Weekly Menu Plan is back with brand new recipes to share with you. This week, we have quite a few vegetarian or vegan options. It seems we are all getting ready for beach season! Don’t forget to PIN them to save! Enjoy!

Here’s how it works: Every Friday morning, a new menu plan will be delivered to your email. It consists of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead. I’d love to hear from you & see your creations! The first Diva up this week is yours truly.  It’s Monday, so I’m kicking off the week with a meatless dish.  My Vegan Crispy Tofu Asian Noodle Bowl is just the thing for starting the week off feeling good.

Next up is Comfortably Domestic’s Moroccan Roasted veggie Power Bowl.  I am currently craving this recipe and will be adding it to the rotation! Isn’t this beautiful?

The midweek meal is brought to you by Pastry Chef Online.  This is a two-for-one special! Greek salad or this Hummus with Za’Atar Roasted Chickpeas. I think I will have both, please.

The Speckled Palate has Chili Cheese Biscuits for us and I have to say, I think they would go great with the next recipe!

Finally, we are at the end of the week.  We’ve worked hard all week, we deserve Queso Fundido Chicken.  Queso Fundido is one of my favorite splurge foods when we go out. It is gooey, melted cheese with caramelized onions and strips of roasted poblano peppers.  Queso Fundido is literally “melted cheese” and has many variations, but my favorite is the traditional onions and poblano peppers.

Now for our sweet ending.  This week, we have two desserts. Both of them are family favorites.

The first dessert this week is Pineapple Upside Down Cake from Pastry Chef Online.  This is a lovely, classic cake.

Finally, we end the week with these gorgeous Lemon Sweet Rolls from Comfortably Domestic.  These have my name written all over them.  (Ahem… that was a HINT)
