Dinner Divas Weekly Menu Plan: Week 55

May the 4th be with you!  Happy Friday, Friends and welcome back to Dinner Divas.  This week’s menu features a few quick and easy summertime recipes.  It’s finally starting to feel like summer around here.  If you like this week’s recipes, don’t forget to PIN the menu to save! Enjoy!

Here’s how it works: Every Friday morning, a new menu plan will be delivered to your email. It consists of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans feature (mostly) healthy, seasonal foods that don’t take all day to prepare. THE MENU:

The first recipe this week is Italian Stuffed Peppers from The Speckled Palate.  I love this twist on the traditional rice and ground beef!

The next recipe on our menu is my Thai Turkey Meatballs with Peanut Sauce.  I’ve made these for clients quite a few times and they always get rave reviews.

While I have openly admitted that I can’t seem to be a guest at my own party, Comfortably Domestic gives us a few tips and a recipe for Soy Ginger Chicken Kabobs. 

It is burger season and this Smashed Bacon Double Cheeseburger should be on your list.   It is definitely on mine. Thanks, Pastry Chef Online, for a mouthful of deliciousness.

 

Pulled Pork Coleslaw Egg Rolls from The Speckled Palate would be a great snack for Friday movie night or watching the Derby this weekend.

Recently, I updated an old post –  How to Make Blueberry Mini Pies from Scratch.  These pies are really easy to make.  The dough is very forgiving and the filling is super simple. Plus, they’re adorable.

Finally, we are wrapping it up with these Strawberries and Cream Chia Pudding Parfaits from Comfortably Domestic.  Perfect for summer!
