The Dinner Divas Weekly Menu Plan is back, we have some really good summertime recipes for you. The temps are heating up and it’s all about grilling and hanging out in the summer sun (with sunscreen, of course!).
Make sure you are subscribed so you don’t miss a single recipe!
Here’s how it works: Every Friday morning, a new menu plan will be delivered to your email. It consists of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead. I’d love to hear from you & see your creations! Post a pic using #DinnerDivas and tag @pookspantry! I hope this weekly menu plan provides inspiration and makes life a little easier… one meal at a time.
THE WEEKLY MENU:
Our first recipe of the week is a Gourmet BLT with Cheddar and Avocado from Pastry Chef Online. Just look at that bacon!
Next is Mustard Chicken from The Speckled Palate. Mustard Chicken is an entree the whole family will love, and it can be on the table in less than 45 minutes. Chicken breasts are seasoned and seared, then a creamy mustard sauce is created using the pan drippings, chicken stock, milk, Dijon mustard and dried herbs. Pop the chicken back into the sauce and simmer until ready. Serve the chicken over rice and smother with the decadent mustard sauce. Enjoy with bread so you can sop up more sauce!
The midweek meal is a lighter option this week. My Stuffed Summer Tomatoes – 2 Ways. Tomatoes are plentiful in most gardens this time of year and if you are fortunate enough to have them; odds are, you are looking for ways to use them up. Try stuffing them with a mixture of flavorful herbs and breadcrumb mixed with crab meat. For a Greek twist, try them stuffed with orzo, feta and Kalamata olives. Whichever recipe you try, they are the perfect side dish or light summer meal.
Comfortably Domestic has made a Grilled Steak Salad with Chive Yogurt Dressing for us and this is, in my humble opinion, a perfect summer supper.
Finally we end with another sandwich creation from Pastry Chef Online. A Spicy Chicken Guacamole Sandwich. Perfect for a Friday night with an adult beverage.
WHO WANTS COOKIES?!
Everyone? Oh, good. Because we have TWO cookie recipes this week and I couldn’t be happier about it. First up, we have these Big Chocolate Chip Cookies from Comfortably Domestic. This is a girl after my own heart. I always say, “If you’re going to eat a cookie, EAT A COOKIE”. I could sit with a pile of these and a big glass of milk.
And finally, we end our week with the sweetest Funfetti Cookies from The Speckled Palate. Funfetti Cookies are a colorful dessert to make year-round! These made-from-scratch sprinkle cookies mix up easily and bake beautifully from a sugar cookie base. Inspired by the favorite childhood boxed birthday cake, these Funfetti Cookies are slightly chewy, soft and chock full of rainbow sprinkles. Perfect for birthday parties, graduations, baby showers, tailgates and more, Funfetti Cookies are a delicious treat to serve for any occasion!
