Dinner Divas Weekly Menu Plan: Week 64

Here’s how it works: Every Friday morning, a new menu plan will be delivered to your email. It consists of 5 dinner options, plus 2 extras. THE WEEKLY MENU PLAN:


Starting off the week are these Juicy Lucy Burgers from The Speckled Palate. Way to start out strong!

Next is my Spiralized Beet, Carrot and Apple Spinach Salad. Not only is this salad a showstopper, but it’s good for you AND it’s delicious.  Those things don’t always go together, but I am happy to report that they do in this salad!


Our midweek meal is Thai Red Curry Coconut Shrimp with Sweet Potato Noodles. This is literally one of my favorite meals.  If I’m feeling lazy and I don’t want to make sweet potato noodles, I roast them in a hot oven and it is just as divine.


Pastry Chef Online has made Whole Wheat Pita Bread. I can think of at least half a dozen things that I would happily stuff in there, roll up or dip into with this bread.


And now, presenting Spicy Mussels with Wine and Chorizo from My Imperfect Kitchen. Can I tell you how much I want to faceplant in that bowl?!


The Speckled Palate is back with something that is close to a lot of hearts: Cream Biscuits and White Sausage Gravy.  This is the guilty pleasure of many friends!


Finally, we end with Vinegar Pie from Pastry Chef Online. I can’t wait to try this pie. I think it will make a lovely addition to my fall baking list.
