Our recipes are starting to take a turn from grilled foods to roasted dinners and while I grill all year, I’m ready for one pot meals that simmer away happily without much fuss. First up this week is Polish Sausage with Apples, Onions, and Butternut Squash from Pastry Chef Online. This is the kind of dinner that celebrates all the wonderful flavors of fall.
Next on this week’s dinner divas meal plan is Turkey Sausage Jambalaya from The Speckled Palate. This is a great big batch meal to have extras for lunch the next day.
Our midweek meal is my Seared Halibut with Meyer Lemon Gastrique. This restaurant quality dish is easily made at home with only a handful of ingredients. It looks and sounds rather fancy, but it’s actually fairly easy and it’s done in under 30 minutes.
Garlic Pork Quesadillas with Mango Salsa from Comfortably Domestic are a great midweek meal, especially if you have some of the prep work already done. I don’t know about you, but I could eat this any day of the week.
Finally, we’re wrapping up our week with Cheeseburger Salad from Foodie with Family. I love salads. I also love cheeseburgers. This is the best of both worlds and I couldn’t be happier about combining these two.
and now, the extras!
White Beans with Arugula and Sun-Dried Tomato is about as easy as it gets. This side dish is ready in 10 minutes and did I mention, it’s EASY?! I’m talking kindergarten-level easy. Exactly what I need after a long week.
Finally, our sweet ending in the form of Salted Chocolate Chip Cookies from Comfortably Domestic. There’s nothing like a warm chocolate chip cookie, is there? Amiright?!
