The weekly menu plan is back with some lighter fare after a week of eating All The Carbs. The holiday season is in full swing now and we are looking forward to all of the parties, baking and merriment! I will be starting all of my baking next week, starting with those shortbread cookies pictured below. They are unbelievably delicious.

The Weekly Menu
We start the week with Pulled Pork Coleslaw Egg Rolls from The Speckled Palate. These are a fun idea for a dinner made from appetizers. Great for parties or hosting guests, these are sure to be a big hit! My in-laws usually do a big snack food spread for Christmas Eve while we’re opening gifts, I think these would be a tasty addition to the gathering.
Our next recipe is Vegetarian Stuffed Acorn Squash from Pook’s Pantry. I absolutely adore stuffed acorn squash and I have a few recipes for stuffed squash on this blog. It’s a great all in one meal. There are endless way to customize it, which makes it perfect for feeding different tastes within the family. It is also a nutrient-dense meal, which we all need during the colder months to help fight off cold season.
Comfortably Domestic has Turkey Lettuce Wraps for us this week. I, for one, am looking forward to a few meals like this. During the holiday season, I try to fit in as many lighter meals as possible to balance out the cookie consumption. Because, I’m not giving up cookies.
Black Eyed Pea Soup from Pastry Chef Online is a must have for the new year. It’s also known as “good luck soup”, so this will be our first meal of the New Year to usher in all the good luck possible. It is made in the Instant Pot, which makes speedy work of this soup.
Finally, we wrap up our week with Jessica Gavin’s Chicken with Maple Mustard Sauce. If you’ve never had the maple mustard combination, do yourself a solid and make this chicken. It’s a delicious way to flavor the crispy chicken thighs used in this recipe. Served with lots of vegetables, this is a nutritious and tasty meal.
And now, the extras!
Pastry Chef Online has beautiful Garlic Parmesan Pull Apart Rolls for us. These rolls will up your roll game exponentially. They are made with potato, which makes them pillowy soft.
Finally, we wrap it up with The Speckled Palate’s Ginger Rosemary Shortbread Cookies. I was lucky enough to receive a tin of these cookies from the source herself last year and I can vouch for their deliciousness. I was hooked on the first bite.
