Happy New Year, Friends! Welcome to the new Dinner Divas Weekly Menu Plan. I’ve given it a little facelift and made it a bit cleaner looking. We are so excited to start out the new year with fresh, healthy recipes after all of the cookies we’ve eaten. Speaking of cookies, don’t forget to check out those breakfast cookies. They are actually good for you and make a fantastic grab and go breakfast or a snack on the run.
Here’s how it works: Every Friday morning, a new menu plan will be delivered to your email. It consists of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plan features quick and easy recipes. Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead.

First up this week are these super tasty Meal Prep Mediterranean Chicken Bowls from Pook’s Pantry. It is one of my most popular recipes on the blog and they’ve been pinned quite a bit. They are great for getting back on track with better eating after the holidays. It is one of our personal favorites for meal prepping.
Next up on the dinner divas weekly menu, it’s Taco Tuesday with Comfortably Domestic’s Roasted Black Bean Tacos. I love these for a vegetarian option. You get plenty of fiber and nutrition from the beans and they are meaty, so you feel full and totally satisfied.
Pastry Chef Online has a Cream of Cauliflower Soup this week that happens to be keto friendly. If you’re following a keto diet, this is a perfect light dinner or lunch option. It’s also great for those of us who aren’t on a keto diet. This is a perfect dinner for midweek meals. It’s quick, delicious and makes a tasty lunch the next day.
The Speckled Palate has a Whole30 Steak Salad with Orange Vinaigrette. This is great for anyone trying to eat a little healthier after the holidays and especially those doing the Whole30 program. It’s a perfect recipe to make ahead and take for lunch, too! I’m all about leftovers for lunch and the dinner divas weekly menu has plenty of them to choose from.
Finally, we wrap up the week of dinners with Garlic Shrimp Montaditos from My Imperfect Kitchen. This is an open-faced shrimp sandwich and a after a week of eating so well, we deserve some bread. The carb lover in me is very happy to have a piece of bread with some delicious garlic shrimp piled on top of it.
This week, we went with a breakfast theme for the extras. First up, we have Granola Breakfast Cookies from Pook’s Pantry. The video at the top of this post shows you just how easy they are to make. You can swap out different types of dried fruit and make a variety to choose from, or use up whatever you have leftover from holiday baking! We all have little bits of dried fruit and nuts hanging around, so don’t let them go to waste. Use them up to make something delicious and nutritious.
Our last recipe on the dinner divas weekly menu is from Comfortably Domestic. Her Blueberry Protein Pancakes are just the thing to start the weekend off with a tasty breakfast. I think these are in my future tomorrow, I still have 20 pounds of blueberries in my freezer that I need to use up and this looks like a very tasty way to do it.
