If you’ve been around here lately, you know that I am struggling with this too. It’s not just you. I figured, if I cook for a living and spend 6 days a week in front of a stove, and I’M having a hard time… well, it might help you too. Here’s how it works: Every Friday morning, a new menu plan will be delivered to your email. It consists of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plan features quick and easy recipes. Starting off Dinner Divas this week is Comfortably Domestic’s Farmers Omelet. Breakfast for dinner is one of the easiest dinners to put together quickly and easily. A friend of mine does “brinner” once a week and now, I’ve started putting it on our menu as well. A great way of using up veggies is an omelet just like this. I always have little containers or baggies of leftover vegetables in the fridge and using them up in a soup or an omelet is simply tiding up and not wanting to waste food. Just look at the vegetables bursting out of this delicious omelet!
Next up on this week’s Dinner Divas menu is Pastry Chef Online with Spicy Chili Cheese Dip. This would be great with some pasta stirred into it or eaten just as is with chips for a “snacky” kind of dinner. Also, a perfect thing to make for the big game or any game day weekend.
The Speckled Palate is our midweek meal with her Sweet Tea Oven Fried Chicken. I have made this recipe and I will vouch for its deliciousness. I love how the subtle flavors come through. It does not taste like you are eating iced tea. It is baked instead of fried, which also makes it a little better for you.
My Imperfect Kitchen has something this week that I can’t wait to make. Instant Pot Vegetable Bolognese. If you have been thinking about getting an Instant Pot, but you haven’t taken the leap yet, let me tell you that it is worth it. It reduces cooking time and allows you to basically walk away and do something else while it’s cooking. I would pile this sauce on top of zucchini noodles for a low carb dinner or penne pasta if I’m not watching my carbs. I’d even eat it with an egg on top for lunch.
Finally, we end our week with Pook’s Pantry Superfood Salad with Pomegranate. This has quickly become my favorite winter salad, so it had to be shared with you on Dinner Divas. I’ve eaten it as a side to lamb, as a light dinner and made into a meal prep for lunches. I’ve served it to guests who loved it as much as I do, so I hope you give it a try. The creaminess of the sweet potatoes goes so well with the greens. I resisted calling this a salad, because I don’t really see it as a traditional “salad”, but I guess once you put a bunch of greens down on a platter, that’s what it is. You can change the cheese, change the nuts, leave them off completely, etc. Make it your own, but please make it!
This is one of my all time favorite foods. Candied bacon is the best of all worlds. Comfortably Domestic made this Candied Maple Bacon for us and I for one am jumping for joy. Sweet and salty is the ultimate combination and you already know how much I love bacon, so this recipe is a slam dunk.
The final recipe this week on Dinner Divas is a favorite dessert of mine. Clementine Cake from Pook’s Pantry is one of the easiest cakes you could make. The entire thing is made in the food processor, which I love! It uses the whole clementine, so there is no peeling or juicing. It is also gluten free and super moist, so you can have a slice days after you’ve made it and it’s still fantastic. Top it with a simple glaze or a dusting of powdered sugar and it’s the perfect cake for practically any occasion.
