Stove-Top Island Spice Popcorn with Coconut Oil and Turmeric

Make movie night memorable with this coconut oil popcorn. Stove top popcorn sprinkled with a sweet and savory spice blend turns plain popcorn into an addictive snack!

Popcorn.  It’s a movie theater staple and it is practically mandatory snacking for movie nights at home.  Heck, it’s even dinner sometimes.  While I’m not knocking butter and salt, I like to dress mine up a bit more.  I open the spice cabinet and put together concoctions that would make Harry Potter’s head spin. Popcorn doesn’t have to be plain Jane and this popcorn definitely turns it up a notch. 

Coconut Oil Popcorn

It might sound strange, but I use seasoning blends that I use on chicken or vegetables for popcorn.  It tastes good on other foods, so it stands to reason that it’ll go great on my movie snack.

We are old school in this house.  Popcorn is made on the stove. We get out the big pot, pour the kernels in with a little oil and “shake, shake, shake” while we peer through the glass lid waiting for the magic to happen. Freshly popped corn tastes so much better than the microwave kind.  

It’s really not a hassle and it takes about 5 minutes longer than the bag.  You can use this seasoning on any popcorn, whatever your preferred popping method.  

Savory Coconut Oil Popcorn

Experiment with a few spice blends!  If you like heat, add a pinch of cayenne pepper.

If herbs are your thing, grind up some rosemary with your salt. You like kettle corn? Try adding a fat pinch of sugar with your salt to give it the sweet & salty flavor.

This spice blend has a turmeric in it, which has anti-inflammatory properties.  So your snack is actually good for you!  Whatever you choose, make it delicious!

How to Make Stove Top Popcorn

Ingredients
  

For Popcorn

  • 3 Tbsp popping corn
  • 1 Tbsp liquid coconut oil

Island Spice Blend

  • 3 Tbsp kosher salt
  • 2 Tbsp black pepper
  • 1 Tbsp turmeric
  • 1/2 tsp. granulated garlic
  • 1 tsp. dried thyme
  • 1 tsp. lemon zest
  • 2 tsp. sugar
  • 1/4 tsp. cayenne pepper optional

Instructions
 

  • In a 4 quart pot, heat oil and corn over medium heat. Cover, with lid slightly ajar to allow steam to escape. Shake frequently as corn starts to pop. Remove from heat when popping slows and set aside.
  • Mix all ingredients for spice blend together. Sprinkle 2 tablespoons of spice blend on popcorn and stir to coat or put into large paper bag and shake to coat.
