Langostino Pasta for Two
Our anniversary was a few weeks ago. We don’t normally go out to dinner and make a big thing out of it. I usually make a slightly fancy dinner at home and we have a relaxing night. This year, we did go out, but I also made this pasta a few days earlier.
This would have been the perfect date night meal for us. We both love (with a capital L) seafood and anything involving langostinos.
I had this gorgeous pasta sitting in the cupboard that I bought at a farmer’s market awhile back. I had been waiting for just the right occasion to use it and when I decided to make a pasta with langostino tails, I knew it was going to be the perfect combination.
Langostino Lobster Pasta Recipe
This recipe starts out with a creamy garlic butter white wine sauce. The pasta is cooked, then tossed in the sauce and langostino tails are added at the end. This really is easy enough for a weeknight dinner. If you are hosting friends, you can very easily double the recipe.
Because this recipe is very simple in it’s ingredients, use the best that you can. Buy the good butter. Splurge for the nice bottle of wine. The list of ingredients is short, so there is nowhere for bad wine to hide (Is there ever?).
How to cook langostinos
Langostino tails are sold already cooked and frozen. That means you don’t have to cook them. How’s that for easy?
Thaw overnight in the refrigerator, then drain well before adding to the pasta.
Where to find langostinos? I always find them at Trader Joe’s or Costco. During the holiday season, especially, they are usually in stock. Because they are sold frozen, it makes it easier to buy a couple of pounds and stash them in the freezer.
This pasta is simple, easy and delicious. The sauce is not heavy at all, so you won’t feel sluggish after dinner. Pasta with langostinos in a creamy garlic butter white wine sauce is one of my favorites now and it is a recipe I will make again and again.
What can I serve with this langostino pasta?
I would serve this simple sautéed broccolini for a green vegetable to go with dinner. You can omit the red pepper flakes if you don’t like it spicy, but it would be a great side dish with this pasta.
For dessert, it depends on whether you want a light dessert or a rich, chocolate one. For a super simple, light dessert, I would go with these no bake lemon cheesecake parfaits. They were so good. I was glad there were only a handful of them, because we could have eaten a dozen. They are delicious.
If you’re looking for a decadent chocolate dessert, especially if it’s a special occasion, I’d pull out all the stops with this dark chocolate cake with red wine ganache.
