No Bake Blueberry Cheesecake Bars

July 27, 2019

Bars are the go-to dessert when you are feeding a crowd. If I can get away with not turning on the oven, that’s even better. These No Bake Blueberry Cheesecake Bars have a chocolate crust with a thin layer of melted chocolate in between for that something extra.

Super creamy, silky smooth filling swirled with fresh blueberry sauce make these bars as pretty as they are delicious.

Blueberry Spritzer with White Wine

April 10, 2019

Blueberry Spritzer is a light, refreshing, summery drink that you could sip on all afternoon. Spritzers are a great warm weather drink because they don’t leave you feeling weighed down and they are quick and easy to make.

The other nice thing about a spritzer like this is the calorie count. It’s on the lower end, so if you are watching your calories, you aren’t going to use up a third of them on one drink. And just look at that color. The blueberry syrup gives this cocktail the most beautiful color. Who doesn’t like a pretty drink?

Favorite Blueberry Recipes for Summer

July 1, 2018

July is National Blueberry Month and I can't think of a better way to celebrate than to "blueberry all the things".  While the season is over here, it is in full swing in other parts of the country and blueberries are readily available.  Let's make some blueberry recipes and celebrate this sweet little fruit.

Blueberries are my favorite fruit and based on the number of blueberry recipes I write, it’s pretty obvious that I’m biased to this little berry.  While most of the recipes are sweet, blueberry also works well in savory dishes, like that blueberry bourbon bbq sauce in the bottom corner.

Dinner Divas Weekly Menu Plan: Week 21

September 8, 2017

weekly menu plan - week 21
Dinner doesn’t have to be stressful. We have a plan! This week, we have some incredible recipes to share with you.  We are finally transitioning from summer to fall, which means that it’s still warm outside, but we are ready for pumpkin and apples.   This week’s recipes reflect just that.  We have a No Bake Blueberry Swirl Cheesecake and Turkey Chili.  The best of both worlds!

How it works: Every Friday morning, a new meal plan will show up in your email. It will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead. I’d love to hear from you & see your creations! Post a pic using #DinnerDivas and tag @pookspantry! I hope this weekly menu plan provides inspiration and makes life a little easier… one meal at a time.

Bourbon Blueberry BBQ sauce

June 12, 2017

https://www.pookspantry.com/wp-content/uploads/2017/06/My-Movie-10.mp4

This Bourbon Blueberry BBQ sauce will soon be your go-to for ribs.  I paired it with a slab last weekend and it was wildly delicious.  The copious amount of vinegar lends itself nicely to fatty pork.  The sweet jamminess of the blueberries with the heat from the peppers comes together to make this bbq sauce out of this world.

Blueberry season is here and I couldn’t be happier about it.  I’ve been on a bit of a “blueberry bender” as of late.  I have “blueberried” everything feasible including barbeque sauce, because, why not?

No Bake Blueberry Lemon Cheesecake Parfaits {Low Carb}

March 28, 2017

No Bake Blueberry Lemon Cheesecake Parfaits, my new go-to quick and easy summer treat! Perfect for a last minute dessert when there is no time for baking. They look elegant enough to serve to guests, but they are ridiculously easy.

No Bake Blueberry Lemon Cheesecake Parfaits

No bake desserts, like these no bake lemon cheesecake parfaits, are a lifesaver in warm weather months, which is most of the year where I live. Additionally, warm weather means bathing suit season.

We are watching what we eat, but I’m not about to deprive myself of a sweet treat. These no bake blueberry lemon cheesecake parfaits are low carb, lower in sugar and at only 2 ounces, they won’t sabotage your diet.  It’s a WIN WIN!

Blueberry Bundt Cake with Vanilla Bean Glaze

August 23, 2016

https://www.pookspantry.com/wp-content/uploads/2014/07/Blueberry-Mini-Pies.mp4

Blueberry bundt cake is the kind of cake I serve guests. It’s easy, delicious and not fussy at all. It is perfect for beginner bakers as well as more experienced bakers. Making a cake from scratch is barely more work than making it from a box and you will be rewarded with something so good, you’ll be glad you put in the extra few minutes of time. This cake is made with buttermilk, which gives it a great flavor.  The glaze is made with three ingredients and take less than one minutes to make.
