One Pan Baked Salmon Niçoise Salad Bowls

Corvina with butter and herbs is the best baked corvina recipe and it couldn’t be easier. Mild corvina fish is topped with a compound herb butter and baked in the oven. Ready in about 20 minutes, this is a healthy and fast weeknight dinner. Try this Corvina with Tomatoes and Olives for a delicious Mediterranean-style fish.

Corvina with butter and herbs is a delicious way to eat fish. This is a great recipe for people who don’t like “fishy-tasting” fish, as corvina is very mild. It is fancy enough for guests, but quick and easy enough for busy weeknights.

How to cook corvina with butter and herbs

First, we’ll make a very easy compound butter with the herbs. It sounds fancy, but it’s just mashing some chopped herbs into softened butter. 

Then, we’ll roll the butter up in a piece of parchment and put it in the freezer for a few minutes. While it is hardening up enough to slice, which doesn’t take long, we get the fish ready.

You’ll want to season both sides of your corvina. Place the corvina fillets on a parchment-lined sheet pan, top with herb butter, then bake. It is honestly that easy.

I love making compound butters. The options are limitless – you could do a blend of herbs and citrus, just herbs (like we’ve done here), or go a completely different route and make them sweet. They are a great way to give your food a boost of flavor.

How to cook corvina in the oven

Baked or roasted corvina is a great way to cook this, or any, fish. Corvina with butter and herbs is one of the easiest seafood recipes I’ve ever made and it is perfect for weeknight dinner.

When you take the fish out of the oven, the butter will have melted and you’ll have a neat pile of green herbs on top of the corvina fillet. Take a knife, or the back of a spoon, and spread the herbs across the top of the fish

After you’ve seasoned the fish and topped it with a coin of compound butter, slide it into a 350°F (177°C) oven for about 16 minutes, depending on the size of your fillets.

The corvina will continue to cook (it’s called “carry-over cooking”) when you remove it from the oven. Let the fish cool on the hot baking sheet for a few minutes, then serve.

Corvina is sometimes referred to as “silver corvina”. There are a few names for this fish – if you are searching for corvina recipes, it is sometimes called drum or croaker. This Atlantic fish is low in mercury and it is on the “good list“. If you are trying to eat more fish, this is a great option.

• Corvina with Citrus Salsa – This is actually my favorite corvina recipe. It is beautiful and delicious. It might seem like an odd combination, but trust me, it works.

• Baked Corvina with Tomatoes – Low in fat, low in calories and ready in 25 minutes. 

• Corvina with Coconut Curry Sauce – Full of flavor and ready in 20 minutes. Served with sliced potatoes and a scrumptious sauce, this is a great dinner recipe.

Corvina with Butter and Herbs

Prep Time 10 minutes
Cook Time 16 minutes
Total Time 26 minutes

Ingredients

  • 4 fillets corvina, 5 - 6 ounces each
  • 4 tbsp. unsalted butter, softened
  • 2 tbsp. scallions, sliced
  • 2 tbsp. fresh parsley, chopped
  • 1 1/2 tsp. fresh thyme, leaves only
  • 1 tsp. kosher salt (I use Diamond Crystals)
  • 1/2 tsp. ground black pepper

Instructions

Make compound butter

  1. In a small bowl, using a rubber spatula, combine softened butter with sliced scallions, chopped parsley, thyme leaves and a pinch of salt and pepper. Fold and lightly mash herbs into butter until it is fairly uniform.
  2. Use the rubber spatula to scrape the butter out of the bowl and place it on a piece of parchment paper.
  3. Form into a log, roll up and freeze for 10 minutes.

Prepare corvina

  1. Preheat oven to 350°F (177°C). Line a sheet pan with parchment paper.
  2. Season both sides of the corvina with remaining salt and pepper.
  3. Slice a 1/4" thick piece of compound butter and place on top of fish.
  4. Bake for 16 minutes (up to 18 minutes for thick fillets).
  5. Remove from oven and cool on sheet pan.

Notes

• Spread the herbs across the top of the fish after it has cooled for a few minutes.

• Top with additional fresh herbs or compound butter, if desired.

Baked Corvina Recipe with Tomatoes

This baked corvina recipe is effortless and done from start to finish in about 25 minutes. Busy weeknights call for a quick and easy meal like this. If you are looking for a healthy seafood recipe, this is it. Sweet, buttery corvina baked with tomatoes and olives is not only good, it’s good for you. For another easy weeknight dinner, try this pan seared corvina.

If you’ve never tried corvina before, you are in for a treat. It is a very mild-tasting fish that is almost sweet and has a wonderful buttery texture. A few years ago, I made this corvina recipe with coconut curry sauce. It was a big hit with everyone who tried it and before I knew it, people were asking for more corvina recipes.

I make a new corvina recipe about once a month for clients, but I’ve been totally remiss about sharing them with you guys. I’m sorry! The more I talk to the people I cook for, the more I’m realizing that corvina has become the favorite, pretty much across the board.

It is very mild, so the folks who don’t love a strong-flavored fish (like salmon) really like it, as well as the people who love all seafood.

How to cook corvina

Baking corvina in the oven is one of the easiest ways to cook fish. I love a piece of pan fried corvina, but sometimes I don’t want to stand over the stove. Those nights call for baked fish.

To bake your fish, season both sides of your corvina. Place your portions on a parchment-lined sheet pan or in a baking dish. Add tomatoes, olives, capers and white wine to the pan, then bake. It is that easy.

You can flavor your fish with anything that suits your mood, but my go-to’s are usually white wine, butter and lemon or this tomato, olive and caper combination. It gives the corvina a ton of flavor and makes a delicious topping for your baked fish.

If you are surfing the internet, you may see “silver corvina recipes”. It is essentially the same thing. There are a few names for corvina, it is sometimes called drum or croaker.

This Atlantic fish is low in mercury, it is on the “good list“, plus it is low in calories and saturated fat. This recipe clocks in at about 150 calories, so that is a big win in my book for something so delicious. It also makes delicious corvina tacos!

Corvina has become a bit more popular and thus, has become easier to find. I always see it at my store, but if you don’t, ask! I’m sure they’d be happy to order it for you.

Make it a meal

Here are a few recipes to round out the baked corvina and make it meal.
• Melting potatoes with garlic and herbs – easy side and so delicious!
• Veggie cakes – one of the best ways to get kiddos to eat vegetables
• Oven roasted vegetable pasta – a hearty side that can double as dinner on its own

Baked Corvina Recipe with Tomatoes and Olives

Prep Time 5 minutes
Cook Time 18 minutes
Additional Time 5 minutes
Total Time 28 minutes

Ingredients

  • 4 portions of corvina, 5 ounces each
  • 1/2 cup dry white wine
  • 1 tbsp olive oil
  • 2 cups grape tomatoes
  • 1/2 cup kalamata olives
  • 1/4 cup capers, in brine, drained
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp. chopped parsley, optional
  • 2 tbsp sliced scallions, optional

Instructions

  1. Preheat oven to 350°F.
  2. Toss tomatoes with olive oil. Place tomatoes on sheet pan or in baking dish and bake for 5 minutes.
  3. While tomatoes are roasting, season both sides of the fish with salt and pepper.
  4. Carefully remove tomatoes from oven and add fish to hot pan.
  5. Add wine, olives and capers to pan around fish.
  6. Bake for 16 - 18 minutes, depending on thickness of your fillets.
  7. Remove from oven and sprinkle with fresh parsley and scallions, if desired.

Notes

*If you prefer not to use wine in the recipe, use a vegetable or seafood stock in its place.

Cod & Tapenade

Some things just go together…  peanut butter & jelly, bacon & eggs,  mashed potatoes & gravy,  champagne & …  hell, ANYTHING.

For me, another one of those pairings is fish and any kind of salty condiment.  I love salt.  I know it isn’t good for you in excess,  but I can’t help it.  There are at least 8 different kinds of salt in my kitchen at this very moment.  Smoked Salt, Truffle Salt, Hawaiian Pink Salt, French Sea Salt, Kosher Salt,  Maldon Salt, Australian Pink Flake Salt, Sel Gris,  but NEVER idiodized table salt.

I am not alone in this near-obsession.  As is the case with most Chefs, we have a salty palate.  What I mean by that is we are so accustomed to highly seasoned food that for the average person it can be a bit too salty. (My Mom used to tease me that she was going to buy me a salt lick at the feed store by our house).

To feed my addiction,  I made olive tapenade.  It is one of the most delicious things and it will keep in your refrigerator for over a week.  It can be eaten on its own:  spread of a piece of warm, toasted baguette, or use it as a flavoring on a piece of fish for example.  Luckily for me I have a great  fishmonger a few blocks away, which brings me back to some things just go together…  Fish loves salt.  It doesn’t have to come from actual salt,  it can come from bacon, capers or olive tapenade!  If you think about it, it makes perfect sense.  Where do fish live?  (in salty ocean water…)
