Fall panzanella salad – a perfect autumn side

Colorful fall panzanella salad is full of autumn vegetables like roasted butternut squash and Brussels sprouts. Fresh apples, pecans, and pumpkin seeds give it an extra bit of crunch.

Fall salads are some of my favorites. They get earthier, heartier and sometimes, a bit more interesting than their warm weather counterparts.

This one is no exception. There is a ton of flavor going on in this bowl and each bite is better than the one before.

Now that the holiday is over and that big bowl of mashed potatoes is staring at you every time you open the fridge, let’s repurpose those leftovers.  This week, we have everything from salad to pizza, to casseroles.  Make sure you are subscribed so you don’t miss a single recipe! Here’s how it works: Every Friday morning, a new menu plan will show up in your email. It will consist of 5 dinner options, plus 2 extras.
