One Pot Chicken Pasta with Creamy Sun-Dried Tomato Sauce

One pot meals are a lifesaver. Whether it is a special occasion or a busy weeknight – getting dinner on the table quickly, with a minimum of dirty dishes is always a win in my book. This one pot chicken pasta with creamy sun-dried tomato sauce is a crowd pleaser every single time.

We all need quick and easy recipes that we can make without much fuss. This is that kind of meal. It’s comfort food that tastes amazing, everyone will eat it without complaint and it’s really easy to make and clean up.

For me, I can’t ask for anything more.

Dinner Divas Weekly Menu Plan : Week 26

Menu planning can be difficult, I know. I do it every single week. I do it for my own house, for this post and for clients. The trick to planning a menu is prep and making sure you have everything on hand.  The Dinner Divas have taken care of everything (except shopping) for you.  We provide recipes and menu ideas to get you through the week.

Here’s how it works: Every Friday morning, a new meal plan will show up in your email. It will consist of 5 dinner options, plus 2 extras. Those two extras could be side dishes, dessert, drinks, etc. The Dinner Divas weekly menu plans will feature (mostly) healthy, seasonal foods that don’t take all day to prepare. Getting the weekly menu delivered to your inbox on Friday morning gives you the chance to make your shopping list and get organized for the week ahead. I’d love to hear from you & see your creations! On to the Menu:

We begin the week with Lighter Loaded Baked Potato Soup from Comfortably Domestic. Now that we are moving into soup weather, I’m so looking forward to meals like this!

Pastry Chef Online brings us Sausage with Apples, Onions and Butternut Squash.  This one pan meal looks so delicious!

The Girl in the Little Red Kitchen has our midweek meal.  Her Broccoli Rabe and Sausage Pizza turns one of my favorite pasta dishes into a pie!

Our next to last dinner recipe comes from the Chef Next Door with her Cheddar Beer Soup.  

Finally, we end the week with this Vegan Crispy Tofu Asian Noodle Bowl.  It is the perfect meatless meal, so if you do “Meatless Monday”, this is perfect.  It is so full of vegetables, herbs and FLAVOR that you won’t feel like you are missing something. I seriously could not stop eating it.

Now, we are on to the desserts!  Clearly, everyone has caramel on the brain…

First up is my Caramel Apple Cupcake with Apple Cider Buttercream.  You absolutely must make these at least once.  They are so unbelievably delicious!

Finally, we end with Salted Caramel Fruit Dip from Comfortably Domestic.
