4 lbs. bone-in short ribs
6 carrots
2 yellow onions
3 stalks of celery
1 1/2 cups apple cider
2 cups beef stock
6 cloves garlic
1 apple
3 tbsp. olive oil
1/4 cup flour

This recipe is made with BONE IN beef short ribs. Most often, braises are tough cuts of meat that benefit from long, slow cooking.
The first step is seasoning the short ribs. Don't be shy with the salt & pepper - season aggressively!
Lightly dust them with flour - then shake off the excess, before browning them in a hot Dutch oven pot.
Nestle browned short ribs into pot with carrots, onion, celery, garlic and herbs. Add apple cider and stock, then slide into the oven for 3 hours.
If you work from home, this is a great dinner to start around lunchtime and let it slowly simmer away until the evening.
