Day of the Dead Cupcakes

Perfect for a Día de los Muertos party, these mexican cupcakes are colorful and delicious.

– Mexican chocolate – Water – Cocoa powder – Flour – Salt – Baking Soda – Butter – Brown sugar –  Sugar – Eggs – Mexican Vanilla, – Cayenne pepper

Preheat oven to 350°F (176°C) and line cupcake pans with 14 papers.

In a small bowl, combine chocolate, cocoa powder and boiling water.

In a medium bowl, combine flour, baking soda and salt, whisk to combine and set aside.

In a large bowl, beat butter and sugars together with an electric hand mixer until light and fluffy

Add eggs one at a time,  then vanilla. Add half of the flour mixture and beat just to combine. Add half of the chocolate mixture and beat just to combine.

Bake for 18 - 22 minutes, or until a toothpick comes out with a few moist crumbs.

With colorful sugar skull decorations and fun sprinkles, these cupcakes will be the hit of your día de los muertos fiesta!
