Golden raisin biscotti with almonds topped with crunchy sugar and salt make a delicious addition to your holiday cookies, or any time of the year!

Ingredients for the Biscotti

Granulated sugar

Unsalted butter

Vanilla

Amaretto

Golden raisins

Almonds

Eggs

All-purpose flour

Kosher salt

Baking powder

Ingredients for the egg wash and sugar/salt topping:

Water

Egg

Vanilla

Turbinado/coarse sugar

Flake sea salt

Making biscotti is easy! You’ll need a couple of mixing bowls, a whisk, a rubber spatula and a lined baking sheet.  Whisk together the flour, baking powder and salt.

In a separate bowl, combine the sugar, butter, amaretto-soaked golden raisins, vanilla, almonds and eggs.

Add the flour mixture to the egg mixture and stir just until combined. Let dough chill for 30 – 45 minutes.

Shape dough into two rectangles, egg wash (to give it a shine) and sprinkle top with salt/sugar mixture.

Bake for 30 minutes. Cool slightly, then gently slice and bake for an additional 15 minutes to make biscotti crunchy.

They are also perfect for cookie exchanges and a favorite for packing up and shipping to friends and family.
