HOW TO COOK HUBBARD SQUASH

Hubbard squash has a bluish-gray shell with deep orange flesh. It makes for a striking contrast. They can range in size from 5 - 40 lbs.

Trim each end to give yourself a flat surface, then stand the squash up and slice it down the middle with your knife.

For roasted Hubbard squash, slice the halves into 1″ thick slices and roast in a hot oven for about 25 minutes.

The easiest way to cook this winter squash is to cut it in half, clean out the seeds and roast it in the oven, cut side down, for about 45 minutes.
