Cherry Chutney

Sauté onions and garlic in oil. Cook just until softened and translucent - we are not browning them.

Next, add red wine vinegar and cook for a few minutes to soften onions a little more. The vinegar will also help to mellow the onions.

Next, add cherries, currants, garlic, ginger, mustard, brown sugar, salt & pepper. Let it cook for 30 minutes.

This cherry chutney recipe pairs well with a charcuterie or cheese board, plus it makes a great bruschetta topping.
