PEPPERMINT HOT CHOCOLATE CUPCAKES
with peppermint buttercream
Bittersweet chocolate cupcakes topped with a peppermint swiss meringue buttercream. Peppermint Hot Chocolate Cupcakes are a dreamy little cupcake perfect for the holiday season.
Preheat oven to 350°F and line muffin tin with paper or foil liners.
Place chopped chocolate and cocoa in medium bowl and pour hot coffee over mixture.
Let it sit for about 5 minutes, then whisk until smooth and chocolate has completely melted. Set bowl in refrigerator to cool.
Whisk flour, sugar, salt and baking soda together in medium bowl. Whisk oil, eggs, vinegar and vanilla into cooled chocolate mixture until smooth.
Use a small cookie scoop to portion cupcake batter into lined tin, then bake for 10 - 12 minutes.
