Mediterranean Bowl Recipe

An easy and delicious Mediterranean bowl loaded with heart-healthy protein and fresh vegetables.

Ingredients

  • 6 ounces baby greens
  • 10 ounces boneless skinless chicken breast
  • 1 cup cherry tomatoes halved
  • 2 ounces red onion sliced thinly
  • 8 kalamata olives halved
  • 4 pieces marinated artichokes
  • 4 tablespoons hummus homemade or store-bought
  • 1/2 lemon
  • 1/2 cup flat-leaf parsley washed
  • 1/2 cup cooked quinoa
  • 4 falafels
  • Tahini dressing
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp granulated garlic
  • 1/2 tsp granulated onion
  • 1/4 tsp ground cumin

Instructions

  • Bake chicken
  • Preheat oven to 350°F (177°C).
  • Season chicken with salt, pepper, granulated garlic, granulated onion and cumin. Line a baking sheet with parchment paper.
  • Bake chicken on lined baking sheet for 25 minutes (or until meat thermometer reads 160°F)
  • Remove from oven and cool to room temperature, then slice into thin strips.
  • Assemble Bowls
  • Divide greens evenly between two bowls.
  • Top each bowl evenly with cooked chicken, tomatoes, onions, olives, artichokes, hummus, parsley, quinoa and falafels.
  • Squeeze lemon pieces over top of each bowl, then discard lemon. Drizzle each bowl with tahini dressing and serve.
