By the glass
- 6 ounces // 180ml rosé chilled
- 4 ounces // 120 ml cranberry ginger soda see notes for other options, chilled
- 2 ounces // 60ml ginger simple syrup chilled
By the pitcher
- 1 bottle // 750ml rosé wine chilled
- 16 ounces// 475 ml // 2 cups cranberry ginger soda chilled
- 8 ounces // 240ml // 1 cup ginger simple syrup chilled
Garnish
- Ice cubes with fresh cranberries and rosemary sprigs optional
Ginger simple syrup
- 1/2 cup granulated sugar
- 1/2 cup water
- 2 inch piece of fresh ginger peeled and sliced into coins
Make ice cubes (optional)
Make the ginger simple syrup
In a small sauce pot, combine sugar, water and sliced ginger.
Bring to a simmer, stirring occasionally until sugar is completely dissolved, about 6 minutes.
Remove from heat, cool completely, then strain into a glass jar. Cover and refrigerate until ready to use.
Make the cranberry spritzers
Pour 3 ounces (90ml) of rosé into each coupe glass.
Add 2 ounces (60 ml) of cranberry ginger soda to each glass.
Top with 1 ounce (30 ml) of ginger simple syrup, then give each drink a quick stir to mix.
Float one or two large ice cubes in each glass.
To make this drink in a pitcher
Fill the pitcher halfway with ice, then pour in one bottle of chilled rosé. Add 2 cups of cranberry ginger soda, then top with about 1 cup of ginger simple syrup. Give it good stir to mix it up, top with festive ice cubes & serve.
- This cranberry spritzer cocktail can be adjusted to suit your preferences. If you like a stronger drink, use less soda and less simple syrup. Conversely, if you like a lighter drink, use less wine.
- For more cranberry flavor, puree a cup of cranberries and add a spoonful to the bottom of each glass before adding cocktail ingredients.
- Swap out cranberry ginger soda for cranberry juice, plus club soda, ginger ale or ginger beer.
- If you like an extra kick in your drink, use ginger beer instead of the flavored soda.
- You can make the ginger simple syrup a week ahead and store it covered in the refrigerator.
- The drink can be made a few hours ahead and stored in the fridge. It may lose a some of its bubbles and won't be quite as fizzy if you make it in advance.
- For an alcohol-free version, omit wine and replace with cranberry juice.
- To make a vodka cranberry spritzer, omit wine and replace with your favorite vodka.
