Made with common pantry ingredients, these easy heart-shaped scones are perfect for Valentine’s Day.
Topped with coarse sugar for extra sweetness and texture, and a hint of lemon zest in the dough, these lavender scones are a delicious tea time or brunch treat.
2 1/2 cups flour
1 1/2 tbsp. baking powder
1/4 cup sugar
1/2 tsp. salt
5 tbsp. unsalted butter
1 lemon, zested
3/4 cup milk
2 tsp. lavender
Mix dry ingredients together in a medium bowl. Then add cold, cubed or grated unsalted butter to the bowl.
Using a pastry blender, fork, or your fingers, work the butter into the dough until it resembles coarse crumbs.
Reserve 2 tbsp. milk in a small bowl. Whisking remaining milk and egg together, then add to flour and butter mixture.
Mix with rubber spatula just until you no longer see big pockets of flour, and the dough starts to come together.
Turn dough out onto a lightly floured surface and pat it out to a one inch thick circle. Dip the cutter into flour and cut out scones.
Place scone dough on lined baking sheet. Brush the tops with reserved milk and sprinkle with coarse sanding sugar.
Bake at 400°F / 200°C for 14 - 16 minutes. Let cool slightly, then serve with your favorite jam and cream for a special treat!
