Turkey Chili

A delicious and simple turkey chili - great for a crowd!

Ingredients

  • 1 1/2 pounds ground turkey organic if possible
  • 2 TB. canola oil
  • 2 cans diced tomato 14.5 oz can
  • 2 cans kidney beans 15.5 oz can
  • 2 medium yellow onions diced
  • 3 stalks celery diced
  • 1 bell pepper diced
  • 1 clove garlic minced
  • 2 TB. sugar optional
  • 4 TB. chili powder
  • 2 tsp. ground cumin
  • 2 tsp. salt
  • 1 tsp. black pepper
  • 2 cups chicken stock

Instructions

  • In a large pot, heat oil over medium heat until shimmering. Add turkey, breaking up large pieces as it browns. Add salt, pepper, chili powder, cumin.
  • Add onions, peppers, celery and garlic. Cook until onions are translucent. (about 5 - 6 mins)
  • Add diced tomatoes and sugar, simmer for 15 minutes.
  • *At this point, if you like your chili with extra broth, add 2 cups of stock.
  • Add beans and continue to simmer for at least 20 minutes, up to an additional hour.

Notes

The sugar helps to cut the acidity in the tomatoes. If you prefer not to add it, you can certainly omit it.
