Ceviche with Jalapeño and Fresh Summer Corn
Simple, fresh ceviche with fresh sweet corn and jalapeño

- 1 lb. sole cut into 1/2" cubes
- 1/2 cup freshly squeezed lime juice
- 1/4 cup red onion diced
- 1 jalapeño pepper finely diced
- 2 medium ears sweet corn kernels removed
- 1/4 cup cilantro chopped
- salt & pepper to taste
- lime wheels for garnish optional
In a glass or ceramic bowl: Toss cubed fish with lime juice and allow to sit for 20 minutes, tossing halfway through to ensure all the fish is coated.
While fish is marinating, combine the remaining ingredients in a separate bowl and set aside.
After ceviche has marinated 20 minutes, combine with red onion, jalapeño, corn, ceviche, salt and pepper.
Serve immediately.
