Ceviche with Jalapeño and Fresh Summer Corn

Simple, fresh ceviche with fresh sweet corn and jalapeño

Ingredients

  • 1 lb. sole cut into 1/2" cubes
  • 1/2 cup freshly squeezed lime juice
  • 1/4 cup red onion diced
  • 1 jalapeño pepper finely diced
  • 2 medium ears sweet corn kernels removed
  • 1/4 cup cilantro chopped
  • salt & pepper to taste
  • lime wheels for garnish optional

Instructions

  • In a glass or ceramic bowl: Toss cubed fish with lime juice and allow to sit for 20 minutes, tossing halfway through to ensure all the fish is coated.
  • While fish is marinating, combine the remaining ingredients in a separate bowl and set aside.
  • After ceviche has marinated 20 minutes, combine with red onion, jalapeño, corn, ceviche, salt and pepper.
  • Serve immediately.
