Citrus Pomegranate Salsa

Ingredients

  • 1 cup pomegranate seeds arils
  • 2 oranges peeled and chopped
  • 1 cup grapefruit ruby red, peeled and chopped
  • 3 tbsp olive oil extra virgin
  • 3 tbsp lime juice fresh
  • 2 celery diced
  • 1/4 cup parsley chopped (or cilantro)
  • 1/4 cup mint chopped
  • 1/2 red onion diced
  • 1 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  • Combine all ingredients in a medium bowl.  Toss to combine.  Serve immediately or store in an airtight container in the fridge for up to 2 days.
