Ingredients
Blueberry Simple Syrup

cups
blueberries

cup
water
3/4
cup
sugar
1/2
lemon rind only
Spritzer

bottle white wine
inexpensive, but drinkable, chilled

bottle club soda
chilled
Instructions
Make blueberry syrup
Add all ingredients to a 2 qt pot and bring to a boil.
Lower heat and let the blueberries cook until they are bursting. Remove from heat and cool.
Strain through a fine mesh strainer, pressing lightly with a rubber spatula to extract as much juice as possible from the berries.
Discard solids.
Make spritzers
Fill a glass with ice, then add 3 ounces of wine, 1 ounce of club soda and 1 ounce of blueberry syrup. Stir.
Garnish with blueberries and mint, if desired. Serve immediately.
Notes
Reserve leftover blueberry syrup for other uses, like adding to club soda for an afternoon mocktail.
