Blueberry Spritzer

Ingredients

Blueberry Simple Syrup

  • 3 cups blueberries
  • 1 cup water
  • 3/4 cup sugar
  • 1/2 lemon rind only

Spritzer

  • 1 bottle white wine inexpensive, but drinkable, chilled
  • 1 bottle club soda chilled

Instructions

Make blueberry syrup

  • Add all ingredients to a 2 qt pot and bring to a boil.
  • Lower heat and let the blueberries cook until they are bursting. Remove from heat and cool.
  • Strain through a fine mesh strainer, pressing lightly with a rubber spatula to extract as much juice as possible from the berries.
  • Discard solids.

Make spritzers

  • Fill a glass with ice, then add 3 ounces of wine, 1 ounce of club soda and 1 ounce of blueberry syrup. Stir.
  • Garnish with blueberries and mint, if desired. Serve immediately.

Notes

Reserve leftover blueberry syrup for other uses, like adding to club soda for an afternoon mocktail.
