Fresh Strawberry Daiquiri Recipe

This easy fresh strawberry daiquiri recipe is made from fresh strawberries and has only five ingredients.

Ingredients

For the simple syrup

  • 1 cup water
  • 1 cup sugar

For the fresh strawberry daiquiris

  • 4 cups strawberries hulled & halved
  • 1 cup white rum
  • 1/4 cup fresh lime juice
  • 1/2 cup simple syrup
  • 2 cups crushed ice

Instructions

Make the simple syrup:

  • In a small sauce pot, combine water and sugar over medium low heat. Stir frequently until sugar has completely dissolved.
  • Remove from heat and set aside to cool. Pour into an airtight container and refrigerate. This is best done ahead, so the syrup has time to chill.
  • Make Cocktails
  • Add strawberries, rum, lime juice and simple syrup to blender.
  • Blend on low speed for a few seconds just to mix and begin breaking up the strawberries.
  • Add half of the crushed ice and blend on medium speed and until it starts to come together, then add remaining cup of ice and blend until slushy. (Unless you have a powerful blender, you could risk damaging the motor of your blender if you dump all the ice in at once, plus it may not blend properly. It's best to do it in batches)

Notes

The number of servings will depend on the size of your glassware. I have smaller glasses, so I get about 6 drinks out of this recipe. If you are using 20 ounce tumblers, you will probably only get a couple ;)
For the sugar rim:
If you want to make a sugared rim like the photo - Place about a half cup of sugar on a small plate, wet the rim of a glass with a wedge of lime, then dip it into the sugar on the plate, tapping lightly in the sugar to get a good coating. Pull straight up out of the sugar so you don't knock any off and set it aside to dry a little before filling your glasses.
  • I prefer silver rum for this cocktail, it is not aged (or aged less than a year) and is lighter in taste than other rums.
  • A standard shot (jigger) is 1 1/2 ounces, but many shot glasses, mine included, have one ounce on the small end and 2 ounces on the larger end. So, if you want to measure the rum with a jigger, make sure you know the size of yours, so you can measure accurately.
  • I recommend using FRESH lime juice instead of the bottled stuff. It will completely change the taste of your cocktail.
  • This recipe can easily be doubled or tripled if you are serving a large group. Depending on the size of your blender, you may need to do it in batches.
  • Adjust the amount of sugar to your tastes - berries vary in sweetness. Some may be sweeter than others, so taste your drink and adjust as necessary.
