Strawberry Iced Tea

Easy and delicious strawberry iced tea is a delicious, fruity alternative to plain iced tea.

Ingredients

Strawberry Simple Syrup

  • 2 cups water
  • 1 cup sugar or sugar substitute such as monkfruit
  • 1 1/2 lb. strawberries divided and washed

Iced Tea

  • 6 cups water
  • 6 tea bags or your favorite loose tea

Instructions

  • Boil water for tea (or heat to almost boiling if you are using green tea).
  • Brew tea according to directions. For my loose black tea I heat water to boiling and brew for 5 minutes, then strain the tea through a fine mesh colander.
  • Cool tea slightly, then refrigerate for at least one hour. (While tea is cooling, make strawberry syrup)
  • Hull strawberries and slice them in half or quarters if they are very large.
  • Combine 1 pound strawberries, 1 cup sugar and 2 cups water in a small saucepan and simmer for 20 minutes.
  • Remove from heat and allow to cool slightly, then strain strawberries though a fine mesh colander. Do not press strawberries! Resist the urge to do this - it will cloud your syrup.
  • Discard the strawberries (or save them to add to oatmeal or muffins).
  • Slice the remaining strawberries for garnish and set aside.
  • Fill glasses with ice and add enough tea to almost fill glasses. Add 2 - 4 tablespoons strawberry simple syrup to each glass (depending on your personal preference), with a few fresh strawberry slices.
  • Refrigerate remaining strawberry simple syrup for up to 2 weeks.
