Frozen cherry daiquiri recipe

Ingredients

  • 4 cups fresh cherries stems and pits removed // 2 pints (you can do this one day ahead)
  • 1 cup white rum // 240ml
  • 1/4 cup freshly squeezed lime juice 2 - 3 limes // 60ml
  • 1/2 cup simple syrup recipe below // 120ml (this can be made ahead)
  • 2 cups crushed ice // 480ml

Simple syrup

  • 1/2 cup water // 120ml
  • 1/2 cup granulated sugar // 120ml

Instructions

  • Make simple syrup
  • In a small sauce pot, combine water and sugar over medium low heat.
  • Stir frequently until sugar has completely dissolved. Remove from heat and set aside to cool completely. (This can be made ahead - store in the refrigerator in an airtight container until ready to use.)
  • Make cherry daiquiris
  • Combine pitted cherries, white rum, fresh lime juice, simple syrup and crushed ice in a blender.
  • Blend until smooth and slushy. Adjust simple syrup and/or rum to your preferences, if necessary, then serve immediately.

Notes

  • Depending on the size of your glassware, your serving size may vary.
  • Adjust to your personal tastes. If daiquiri isn't sweet enough, add an additional few tablespoon of simple syrup.
  • You can also use frozen cherries if fresh cherries aren't available.
  • Make extra simple syrup and use it for iced tea, lemonade, or additional cocktail. It will keep for months in the fridge. The next time you are making drinks of any kind, you are already a step ahead!
  • You can make these rum-free by omitting the rum and replacing with cherry juice for a non-alcoholic option.
  • Pit the cherries and remove stems ahead of time as well! You can do this the day before you plan to make these daiquiris. Store the prepared cherries in an airtight container in the fridge and add to the blender with the remaining ingredients when you are ready to make your cocktails.
