Ingredients

  • 1 cup sugar
  • 1 cup water
  • 1 quart fresh blueberries rinsed
  • 2 tablespoons lemon zest

Instructions

  • Combine water and sugar in a small saucepan. Bring to a boil over medium heat, stirring to make sure all of the sugar is dissolved.
  • Use a vegetable peeler to remove strips of zest from lemon.
  • Add blueberries and lemon zest to the pot. Simmer for 8 - 10 minutes, until berries begin to burst.
  • Remove from the heat and allow to cool.
  • Strain through a fine mesh sieve or colander. Do not press on berries (this will make your syrup cloudy, unless you don't mind).
  • Refrigerate for up to one week in an airtight container.

Notes

  • Use cheesecloth if you do not have a fine mesh strainer.
  • Don't toss the blueberries. You can use them in your yogurt for breakfast or folded into a muffin recipe.
