- 1 cup sugar
- 1 cup water
- 1 quart fresh blueberries rinsed
- 2 tablespoons lemon zest
Combine water and sugar in a small saucepan. Bring to a boil over medium heat, stirring to make sure all of the sugar is dissolved.
Use a vegetable peeler to remove strips of zest from lemon.
Add blueberries and lemon zest to the pot. Simmer for 8 - 10 minutes, until berries begin to burst.
Remove from the heat and allow to cool.
Strain through a fine mesh sieve or colander. Do not press on berries (this will make your syrup cloudy, unless you don't mind).
Refrigerate for up to one week in an airtight container.
- Use cheesecloth if you do not have a fine mesh strainer.
- Don't toss the blueberries. You can use them in your yogurt for breakfast or folded into a muffin recipe.
