Chipotle Honey Mustard Glazed Ham

Sweet, salty and just a little spicy, this is the best ham glaze recipe.

Ingredients

  • 10 pound spiral ham

For Glaze:

  • 4 tablespoons unsalted butter 56g
  • ½ cup brown sugar lightly packed / 105g
  • ½ cup honey 170g
  • 2 tablespoons sauce from chipotles in adobo I usually double this, because I like a little heat
  • 3 tablespoons whole grain Dijon mustard
  • 1 tablespoon minced garlic

Instructions

  • Preheat oven to 325°F / 160°C.
  • Place ham on a rack inside of a roasting pan and add ½ cup water to the pan. Cover tightly with aluminum foil.
  • Bake for 1 ½ - 2 hours or until heated through.

Make Glaze:

  • In a small sauce pot, combine 4 tbsp. butter, ½ cup brown sugar, ½ cup honey, 2 tbsp. sauce from chipotles, 3 tbsp. Dijon mustard and 1 tbsp. minced garlic. Whisk to combine.
  • Heat until boiling and sugar is dissolved. Let it boil for 2 minutes, then remove from heat and set aside.
    *Use a slightly larger pot than you think you'll need, in case it bubbles up. You do not want it to boil over.
  • When ham is heated through, remove it from the oven, take off the foil and raise oven temperature to 400°F / 200°C
  • Brush half of the glaze on the ham, making sure to get a bit in between the slices, and bake uncovered for 10 minutes. Brush remaining glaze on the ham and bake for another 10 minutes until glaze is caramelized. Let rest for 8 – 10 minutes before serving.

Notes

  • Keep a VERY close eye on the glaze once it begins to boil. You do not want it to get away from you and boil over. I suggest using a pot slightly larger than what you think you'll need.
  • Brown sugar and honey can burn, so keep an eye on your ham once you've glazed it.
