- 1½ lbs. salmon fillets 4 portions - 6 oz. each
- ¼ cup canned chipotle peppers in adobo
- ¼ cup honey
- 2 cloves garlic
- 2 tablespoons fresh lime juice
- 1 teaspoon salt
- ¼ teaspoon black pepper
Preheat oven to 375°F / 190°C / Gas mark 5.
Put chipotles, honey, garlic, and lime juice in a food processor until smooth. This should only take a minute or two.
Place salmon fillets on a parchment-lined sheet pan and season lightly with salt and pepper.
Spoon mixture on top of salmon, spreading to completely cover the top.
Roast in oven for 12 - 14 minutes (depending on how done you like your fish)
Remove from oven and let salmon rest for a couple of minutes before serving.Garnish with fresh herbs, if desired. Serve with additional sauce, if desired.
- Make sure you place salmon on sheet pan with the blood line side down.
- A note on salt – Not all salt is created equal. A teaspoon of Diamond Crystal kosher salt weighs about 2.7 grams, Morton's kosher salt weighs a little over 5 grams for a teaspoon and table salt weighs 6 grams for a teaspoon. So, adjust accordingly, depending on what kind of salt you are using.
