Ingredients
3/4
cup
sugar
1 cup, if you prefer a sweeter lemonade + 2 tbsp. for muddling
1
cup
fresh lemon juice
from about 5 lemons

water

sprigs lemon thyme
handful of mint leaves
5-8, depending on how minty you like it

lemon thyme sprigs & mint leaves for garnish
Instructions
Combine 3/4 cup sugar, 8 sprigs of lemon thyme and 1 cup of water in a small saucepan and bring to a simmer.
Stir occasionally until sugar is dissolved. Remove from heat & let cool completely. Strain & set aside.
In a large pitcher, muddle the mint leaves with 2 tablespoons of sugar.
Add 1 cup lemon juice, remaining 5 cups of water and lemon thyme simple syrup.
Garnish with lemon slices, fresh mint leaves & a few sprigs of lemon thyme.
Notes
Lemonade will keep in the fridge for about 5 days, give it a stir before serving.
