These peach muffins are big, bakery-style muffins with a tender, moist crumb and plenty of peach flavor. They are loaded with sweet, juicy peaches and topped with a buttery oat crumble. What is the Muffin Method?

The muffin method is a simple mixing technique that produces muffins with a soft, tender crumb. The dry ingredients are combined separately from the wet ingredients, which typically include a liquid fat such as melted butter or oil. The wet ingredients are then added to the dry and mixed just until combined. The muffin method uses liquid fat and minimal mixing to limit gluten development, which gives the muffins their tender texture without the need for a mixer.

How to Make

  1. Prep — Preheat oven to 400°F / 200°C. Whisk dry ingredients together, whisk wet ingredients in a separate bowl or measuring cup. Gently mix the wet ingredients into the dry, do not overmix. A few lumps are fine.
  2. Fold — Using a rubber spatula, fold diced peaches into batter.
  3. Scoop the muffins — To make sure all of the muffins are the same size, use a medium-sized cookie scoop to portion the batter. Then sprinkle the crumble over the muffins.
  4. Bake — When a tester comes out with only a few moist crumbs on it, the muffins are done.

How to peel peaches

  1. Bring a pot of water to a gentle boil. Make a small, shallow “x” on the bottom tip of the peaches with a sharp paring knife.
  2. Carefully drop the peaches into the simmering water for 20 – 30 seconds.
  3. Remove them from the water with a slotted spoon and immediately plunge them into an ice water bath.
  4. Using your paring knife, loosen a bit of the skin and it should slip right off.

One word of advice — do not peel your peaches in advance. Peaches, like apples, will oxidize and turn brown after they are cut or peeled. Peel your peaches right before you start the muffin batter.

Variations and Substitutions

  • Nectarines — I actually prefer nectarines over peaches, so if nectarines look better than peaches that day, it’s an easy swap.
  • Nuts — Pecans would pair quite nicely with these muffins. If you decide to use nuts, please make sure you toast them first, it makes a big difference.
  • Skip the oat crumble — If you prefer to leave the topping off, the muffins will still be delicious!

Peach Muffin Recipe FAQ’s

Can I use frozen peaches?

Yes! Frozen peaches are a great option when fresh peaches are out of season.

Do I have to peel the peaches?

Technically, no. It’s more about the texture. The skin is fairly thin, so you can skip it if you don’t want to peel peaches. However, peeling them does result in a finer texture.

Can I make the crumble ahead of time?

Absolutely. Making the crumble ahead of time is an excellent idea. You can put it in the refrigerator until you’re ready to bake.

How do you keep peaches from sinking in muffins?

This peach muffin batter is thick. That helps to support the weight of the peaches. The other important factor is making sure that the peaches are diced into small, even pieces.

Storage / Freezing Information

To store: Muffins are best on the day they are baked, but they will last 2 – 3 days on the counter, if stored in an airtight container. You can place a paper towel in the bottom of the container to help with moisture, especially in a humid climate.
To freeze: Store in an airtight container or zip-top bag in the freezer for up to 3 months.

Tips for the Best Peach Muffins

  • For evenly sized muffins, portion the batter with a 2-ounce cookie scoop or ¼-cup measure.
  • Dice the peaches into ¼-inch pieces so they distribute evenly throughout the muffins and are less likely to sink.
  • Use ripe but firm peaches — Avoid peaches that are overly ripe and soft, they can break down when diced and release more juice into the batter, resulting in a gummy muffin texture.

Ingredients
  

Crumble topping

  • ¼ cup oats 20g
  • ½ cup flour 60g
  • 1 teaspoon ground ginger
  • ¼ cup brown sugar 55g
  • 4 tablespoons butter melted and cooled

Peach muffins

  • 3 cups all-purpose flour 360g
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon fine salt
  • 2 large eggs
  • 1 ¾ cups sugar 350g
  • 10 tablespoons unsalted butter melted and cooled
  • 1 ½ cups plain yogurt not Greek, room temp / 355mL
  • 2 cups fresh peaches peeled and diced into ¼ inch pieces / 475mL

Instructions
 

  • Preheat oven to 375°F. Butter and flour a muffin tin or line with baking cups/muffin papers.
  • Mix all ingredients for crumble topping in small bowl and set aside.
  • Mix flour, baking powder, baking soda, and salt in a medium bowl and set aside.
  • In a separate bowl, whisk eggs with sugar, then add butter and yogurt. Whisk to combine.
  • Pour wet ingredients into dry and stir with rubber spatula until almost fully combined.
  • Add peaches and gently fold to incorporate. Let batter rest 10 – 15 minutes (optional).
  • Using a 2 ounce measure (1/4 cup) portion batter evenly into muffin cups. (Muffin cups should be about 2/3 full)
  • Sprinkle crumble topping evenly over muffin batter.
  • Bake for 22 – 25 minutes, or until toothpick inserted in the center comes out with a few crumbs attached.
  • Cool in pan for 5 minutes, then move to wire rack to cool completely.

Chef’s Notes

  • All ovens will vary! Also, not all ovens are calibrated correctly. If your oven tends to run hot, check your muffins after 20 minutes and keep an eye on them.
  • If your oven runs cool, it may take up to 25 – 28 minutes for your muffins to bake.
  • Keep toothpicks or wooden skewers handy and test them every couple of minutes after the 22 minute mark if you’re unsure. Tester should have moist crumbs attached to it, it should not be completely clean and dry.

  1. Cheryl, you’ve done it again! I just come search your site now before looking elsewhere because they are always so spot on. I hoarded too many peaches last time they were on sale so I needed a quick recipe to use them up. I figured muffins would be quick and easy. I am so glad you had a this recipe on your site cause they were perfect! Twenty minutes in the oven and they were done but still moist inside. The flavor reminds me of a pound cake which I love.
