Fall panzanella salad – a perfect autumn side

September 9, 2020

Colorful fall panzanella salad is full of autumn vegetables like roasted butternut squash and Brussels sprouts. Fresh apples, pecans, and pumpkin seeds give it an extra bit of crunch.

Fall salads are some of my favorites. They get earthier, heartier and sometimes, a bit more interesting than their warm weather counterparts.

This one is no exception. There is a ton of flavor going on in this bowl and each bite is better than the one before.

Fresh Cranberry Chutney

November 25, 2019

Cranberry chutney is a sweet and sour condiment made with fresh cranberries, onions, ginger and orange zest. It is a great topping for crostini as an appetizer, but is also delicious on baked chicken. If you love the combination of cranberries and orange, try this Cranberry Orange Upside Down Cake. For even more cranberry goodness, this Apple Cranberry Chicken Salad is one of our go-to lunches.

Potato Spinach Casserole

November 19, 2019

Cheesy Mashed Potato Spinach Casserole is perfect for your holiday table. Mashed potatoes combined with parmesan cheese, onions, garlic and spinach make this casserole extra delicious! If you really want to up your mashed potato game, try this aligot recipe for the cheesiest mashed potatoes you’ll ever eat.

Generally speaking, I’m a mashed potato purist. I love butter, cream and a hefty pinch of salt in my mashed potatoes. But, every now and then I get out of my own way and try something new. I’m glad I did because this potato spinach casserole is delicious.

It is creamy and cheesy, but not overpoweringly so, and because it has spinach, I feel a little better about the cream and cheese.

This recipe for potato spinach casserole is sponsored by my friends at Idaho® Potato.  I am so pleased to work with them. As always, all opinions, recipe and photos are my own. Thank you for supporting the brands that support Pook’s Pantry.

Aligot Recipe – cheesy mashed potatoes

November 6, 2019

Imagine the cheesiest mashed potatoes you’ve ever had. Potatoes that are so cheesy, they stretch! They are called “aligot” in French and they are amazing. You only need a handful of ingredients for this aligot recipe. These French mashed potatoes belong on your holiday table, just like classic bread stuffing.

Classic Bread Stuffing

November 4, 2019

Classic bread stuffing is as synonymous with Thanksgiving as turkey. Cubes of dried bread mixed with celery, onions and sage are baked in the oven until golden brown. It is my favorite Thanksgiving side dish, along with the easiest 5 ingredient corn casserole that everyone loves. bread stuffing in white casserole dish with sage leaves

As we are all gearing up for this holiday, the only one that is all about food, I am planning our Thanksgiving menu.

Butternut squash arugula salad, turkey, stuffing, green beans, mashed potatoes, cranberry sauce, melting potatoes with garlic and herbs, gravy, pumpkin pie and cranberry upside down cake.

I may even make a few pumpkin rum balls for after dinner. Can you really ask for anything else? Carbs with a side of carbs. (it’s one day, indulge!)

Baked Fingerling Potatoes with Brown Butter

September 7, 2019

Baked fingerling potatoes tossed with brown butter and herbs make a delicious and easy side. Perfect for your holiday table, these tasty potatoes are full of flavor from nutty brown butter and a mixture of dried herbs. For an Asian twist on these little spuds, try my roasted fingerling potatoes with shishito peppers.

Stuffed Acorn Squash Recipe with Sausage

September 3, 2019

Stuffed acorn squash with sausage is one of those perfect fall dinners or side dish that everyone loves. Filled with savory Italian sausage, spinach and wild rice, it is a comforting and satisfying dinner. To serve it as a side, choose smaller acorn squash. These smaller servings would be perfect for your holiday table. For a no meat option, try my vegetarian stuffed acorn squash.

The acorn squash flesh takes on an almost buttery texture when roasted. The caramelized squash is sweet and it is so tender and soft that it practically melts in your mouth.

September 2, 2019

Pumpkin rum balls are the perfect treat for all of your fall celebrations. This version is made with graham crackers instead of the usual wafer cookies, making them reminiscent of pumpkin pie. For a traditional rum ball recipe, this one packs a punch.

My Best Ever Thanksgiving Recipes

November 20, 2017

It’s that time of year when we are all searching for our favorite Thanksgiving recipes. My personal favorite is classic bread stuffing, it isn’t anything fancy or complicated, just pure Thanksgiving comfort food.
Thanksgiving Collage Thanksgiving is only a few days away and if you are still trying to fill out your menu, I’m here to help.  For me, the sides and dessert are the BEST part of Thanksgiving.  I like turkey as much as the next person, but it can’t compete with mashed potatoes, stuffing, squash, corn casserole, etc.    …
