What Makes These Bakery-Style Mixed Berry Muffins Different?

Unlike a basic berry muffin, these are oversized bakery-style muffins with a thick, buttery coffee cake-inspired topping. The generous crumb topping makes them feel like a cross between a bakery muffin and coffee cake.

I’ve used a mixture of blueberries, raspberries and blackberries. Here’s what each of them bring to the muffin recipe:

  • Blueberries: Sweet, juicy, and sturdy enough to hold their shape during baking. They add bursts of sweetness throughout the muffins.
  • Raspberries: Bright and tart with a delicate texture that bakes into soft, jammy pockets. Fold them in very gently to keep them from breaking apart too much.
  • Blackberries: Deep, sweet-tart flavor, they add larger bites of fruit. If they’re especially large, cut them in half to help prevent sinking.

Tips for the Best Bakery-Style Triple Berry Muffins

  • Don’t overmix the batter: Mix just until the ingredients are combined. Overmixing can develop too much gluten, resulting in dense, tough muffins.
  • Fill muffin cups generously: We’re baking oversized bakery-style muffins, not standard muffins.
  • Use a gentle hand when folding in berries: Fresh berries are delicate, be very gentle when folding them in. Otherwise, you risk breaking them apart and creating a discolored batter.
  • Don’t skip adding a bit of plain batter: I use this method in all of my cream cheese pound cake recipes, and it works beautifully every time.

  • Mixed berries – Blueberries, raspberries, and blackberries give these muffins a balance of sweetness and tartness. Use either fresh or frozen berries.
  • Flour – All-purpose flour gives these muffins structure.
  • Vanilla and almond extracts – Rounds out the flavors and complements the berries.
  • Baking powder and baking soda – Leavening agents, they give the muffins their lift.
  • Salt – A small amount of salt balances the sweetness of the batter and crumble.
  • Yogurt – Provides moisture to the batter and keeps the muffins tender.
    • Substitution: You can swap out sour cream if that’s what you have in the fridge.
  • Eggs – Eggs provide structure and richness, and they bind the batter as it bakes.
  • Sugar – Sweetens the muffins and helps create a lightly golden crust.
  • Butter – Melted butter keeps these muffins moist while giving them a tender crumb.
  • Crumb topping ingredients (not pictured) – Flour, brown sugar, butter, cardamom, and salt create the thick coffee cake-style topping.

How to make

Here’s a quick summary of how to make mixed berry muffins. Please see the recipe card at the bottom of this post for the full recipe.

  1. Prep – Preheat oven to 375°F/190°C. Combine dry ingredients in a medium mixing bowl. Whisk wet ingredients together in a measuring cup or small bowl. Combine, then fold in berries.
  2. Prevent berries from sinking: Add a small amount of plain batter to the bottom of each muffin cup. Then gently fold berries in to remaining batter. This creates a base that supports the heavy fruit and helps to prevent the berries from sinking during baking.
  3. Fill – Muffin cups should be filled just over 2/3 full. We’re making big, bakery quality muffins, so underfilling them will give us disappointing results.
  4. Top – Pile the coffee cake style crumb topping on the muffin batter. Don’t break up large crumbs, that’s what we want. If you have sandy crumbs, squeeze them together, then sprinkle on top. Don’t skimp on the crumb topping, The thick coffee cake-style crumble is what gives these muffins their bakery-style finish.

Fresh vs Frozen Berries for Muffins

Fresh berries are best during the summer months, and they have a brighter flavor than frozen. The one advantage that frozen berries have is that they are available year-round. If you choose to use frozen, they don’t need thawing, but you’ll want to break up any large clumps before adding them to the batter. The last thing to consider is that they can slightly increase bake time due to extra moisture.

Why did my muffin batter turn purple?

Frozen berries can sometimes turn muffin batter gray or purple because the fruit releases juices as it thaws and mixes with the batter. To minimize this, keep frozen berries frozen until you add them to the batter, and fold them in gently.

Why did my berries sink to the bottom of my muffins?

Berries can sink when the batter is too thin or when the weight of the fruit pulls them downward as the muffins bake. For these muffins, a small layer of plain batter is added to the bottom of each muffin cup before the berry-filled batter goes in, creating support that helps keep the berries more evenly distributed.

What are bumbleberry muffins?

Bumbleberry muffins are made with a combination of berries. There is no single required berry combination, but they commonly include blueberries, raspberries, blackberries, or other seasonal berries.

Storage / Freezing Information

To store: Although muffins are best on the day they are made, you can store them in an airtight container for up 3 days at room temperature. To extend the life of these berry muffins, store in an airtight container in the refrigerator for 5 to 7 days.
To freeze: Place individual muffins on a baking sheet and freeze for an hour. Wrap tightly and store in the freezer, in an airtight container, for up to 3 months.

Variations and substitutions

  • Berry – Use a combination of all 3 berries, like I have, or a combination of just blueberries + blackberries, or raspberries + blackberries, or blueberries + raspberries.
  • Oats – If you prefer a crumb topping with a bit of crunch, add 2 tablespoons oats to the crumble mixure.

Buttery Crumb Topping

  • 1 cup all-purpose flour 120g
  • ¾ cup brown sugar 160g
  • ½ teaspoon kosher salt
  • ¾ teaspoon ground cardamom
  • 6 tablespoons unsalted butter, melted and cooled 85g

Mixed Berry Muffins

  • 6 tablespoons unsalted butter, melted and cooled 85g
  • ¾ cup granulated sugar 150g
  • ¾ cup plain yogurt (not Greek) 180mL (or sour cream), room temperature
  • 2 eggs room temperature
  • 1 teaspoon vanilla extract or vanilla bean paste
  • ½ teaspoon almond extract
  • 2 cups all-purpose flour 240g
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 ½ cups berries *Heaping 1 1/2 cups – mixed blueberries, blackberries and raspberries. I used 1/2 cup of each berry.

Instructions
 

Make the crumb topping

  • In a small mixing bowl, combine the flour, brown sugar, salt and cardamom. Stir together until well combined.
  • Pour melted butter over the mixture, and stir with a fork until large clumps form. Try not to break up the clumps – this is what you want. Place in refrigerator while you make the muffin batter.

Make muffins

  • Preheat oven to 375°F / 190°C / Gas Mark 5.
  • If desired, place berries in the freezer to firm up while you are making the muffin batter. *This helps to firm them up just slightly to prevent breaking while folding them into batter. They will not be fully frozen.
  • Line a muffin tin with 9 paper liners.
  • In a medium mixing bowl, whisk together melted butter, sugar, yogurt, eggs, almond and vanilla extracts. Set aside.
  • In a separate medium bowl, combine flour, salt, baking powder,and baking soda.
  • Pour wet ingredients into flour mixture and fold with a rubber spatula to combine.
  • Drop 2 tablespoons of batter into the bottom of each muffin liner.
  • Gently fold the berries into the remaining batter and fill muffin cups 2/3 full.
  • Generously top with the crumb topping, bake for 25 – 30 minutes, rotating the pan halfway through to ensure even baking. Test muffins with a wooden skewer, and when only a few moist crumbs are attached, remove from oven.
    (Check with a tester around 22 minutes, especially if your oven runs hot)
  • Cool muffins in the muffin pan for 5 minutes before removing from pan, then place on cooling rack to cool completely.

Chef’s Notes

  • Store crumble topping mixture in the refrigerator until ready to use. If you have sandy bits at the bottom of the bowl, squeeze them together in your hand to make a larger crumb.
  • Don’t skip my method of placing a bit of plain batter at the bottom of the muffin cup.
  • The tulip-style liners lend support as the muffins rise, resulting in tall, bakery-style muffins.
