My Favorite Summer Salads

Happy Memorial Day!  This week, I am focusing on my favorite summer salads.  The weather is starting to get steamy and the last thing I want to do is heat up the house with the oven.  This time of the year, we tend to eat quite a few salads for dinner.  During the summer months, fresh fruits and vegetables are plentiful, so take advantage of it and fill your plate with Mother Nature’s bounty!

Meal Prep Mediterranean Chicken Bowl

I’m starting with the most popular recipe on the blog.  These are always a big hit.  The flavors go so well together and that tahini dressing is killer.summer salads

 

Spiralized Beet, Carrot and Apple Spinach Salad

Next up is one of the prettiest salads I’ve ever made.  It is so good, you almost forget that it’s good for you.  If you don’t have a spiralizer, but you’ve thought about getting one, this is the one I have:  5 Blade Spiralizer. It is under $30 and works like a charm.summer salads

 

Grilled Pear, Gorgonzola and Candied Pecan Salad

This is a summer go-to for me.  It’s a twist on a classic salad.  The grilled pears are phenomenal, if you haven’t grilled fruit before, there’s no time like the present to give it a go.

A few years ago, I made this for a client of mine.  She then proceeded to request it every other week for 2 years straight.  Yeah, it’s that good.

Israeli Salad

Some of you might not have ever heard of this salad.  I hadn’t until I was in my 20’s and a friend in Brooklyn introduced me to it.  It is the most fresh tasting, summery bite you’ll ever have. It is seriously addicting.

Chicken Taco Salad with Avocado Buttermilk Dressing

This salad was so good, we ate it three days in a row.  Those crispy tortilla strips on top are just enough of a salty crunch to satisfy that craving.

 

Moroccan Chicken Meal Prep Bowls

This salad is great as a weekday lunch or made into a gorgeous platter for dinner.  I’ve also made the chicken and taken the salad components, without the lettuce, and served it over couscous for dinner.  

 

Apple Cranberry Chicken Salad

Finally, I’m wrapping up the summer salads roundup with this chicken salad.  This is another recipe that I made for a client (not the same client) Every Single Week for a year.  I asked her if she ever got tired of it and she looked me right in the face as if I was off my rocker and said “NO!”.  She was a pistol.
