Chocolate coconut truffles with almonds

February 1, 2021

These chocolate-dipped coconut truffles taste like a bite sized Almond Joy candy bar. They are an easy, no bake treat that is perfect for Valentine’s Day. For another delicious dessert, try this dark chocolate cake with red wine chocolate ganache.

Coconut truffles

Valentine’s Day is for chocolate, that’s not up for debate. Whether it’s a box of candy or a chocolate bundt cake, we need some of that cocoa goodness.

Coconut is a favorite of mine, and the combination of chocolate and coconut is delicious.

A very long time ago when I worked in catering, we were craving something sweet that was fast & easy and did not need cooking. What I came up with was this recipe. It earned the name “crack balls” by the kitchen staff because we couldn’t stop eating them.

How to make truffles

These aren’t your normal chocolate truffles made with a ganache. This bite-sized copycat Almond Joy is made even better with an unexpected ingredient – a pinch of salt.

I use a combination of sweetened and unsweetened coconut flakes so the candy isn’t overly sweet. If you prefer them very sweet, use all sweetened coconut flakes to make them.

1. Combine both toasted and untoasted coconut with a pinch of salt and evaporated milk.

2. Using a small scoop, portion out truffles and place on baking sheet.

3. Roll into balls, lightly packing them with the palms of your hands while rolling so they stay together.

4. Dip into melted dark chocolate and toss in chopped nuts.

I like to roll them in chopped toasted almonds, but you can use anything that you have. I’ve used peanuts, cashews and pistachios to coat these coconut truffles and all were delicious.

You can also opt for no nuts, if you prefer, and just dip them in chocolate. Another fun option would be to roll them in red or pink sprinkles.

Once you have them covered, place them back onto a sheet pan to let the chocolate set up.

These candies also make great homemade gifts. Tuck a few truffles into valentine’s treat bags to share with friends, family and neighbors.

Quick, easy and delicious, these chocolate coconut truffles are perfect for surprising your special Valentine.

I really hope you love this recipe. If you make it, snap a pic and share it with me either in the Fabulous Foodie Friends Facebook group or on Instagram by tagging @pookspantry and using hashtag #pookspantry.

Chocolate Coconut Truffles with Almonds

These chocolate-dipped coconut truffles taste like a bite sized Almond Joy candy bar.

Prep Time 15 minutes
Cook Time 10 minutes
Additional Time 15 minutes
Total Time 40 minutes

Ingredients

  • 1 cup toasted sweetened coconut
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 7 oz sweetened, condensed milk (half a can)
  • 1/2 tsp kosher salt
  • 1 cup melted dark chocolate
  • 1 1/2 cups chopped almonds or peanuts

Instructions

    1. Preheat oven to 350°F. Spread sweetened shredded coconut out on a baking sheet in a thin layer and toast in the oven for 5 - 10 minutes, stirring once. When coconut is light brown, remove from oven and set aside to cool.
    2. Combine toasted coconut, shredded untoasted coconut, condensed milk and salt in a medium bowl. Stir to thoroughly combine.
    3. Using a small cookie scoop (or a teaspoon), scoop out mixture and place on a sheet pan lined with parchment paper.
    4. Place them in the fridge for 20 - 30 minutes to set up.
    5. Roll them in your hands to make a nice smooth ball.
    6. Working quickly, dip them in the melted chocolate and then into the chopped nuts and set on a clean sheet pan. If they start to get too warm, put them back into the fridge for a few minutes.
    7. Once they are all dipped and rolled in almonds or peanuts, put them in the refrigerator for about 15 minutes to help the chocolate set up.

Notes

Use a combination of sweetened and unsweetened shredded coconut to keep these truffles from being overly sweet.

Chocolate Coconut Rum Balls

September 28, 2019

Chocolate coconut rum balls are an easy no bake treat that is perfect for any occasion. They taste like the chocolate and coconut candy bar that we are all familiar with, but spiked with a bit of rum. They are a variation of my coconut rum balls recipe and feature two different types of rum.

The flavor develops even more overnight, making them a great option for a make ahead dessert.

Most often, we make rum balls around the holidays. Which is the time of the year when many of us are indulging in two things: booze and sugar. Check and check.

And, because we usually make these around Thanksgiving and Christmas, I need a recipe that doesn’t require much time or energy when I have a hundred other things going on.

Corvina Recipe with Coconut Curry Sauce

May 28, 2019

This post has been recently updated from its original publication date of 7/6/16
A simple coconut curry sauce accompanies this easy corvina recipe. This corvina fish recipe is done in 20 minutes, making it a great weeknight dinner. Paired with sliced, oven roasted potatoes and a delicious sauce, you can have a quick midweek dinner that is better than takeout.

Pan seared corvina with sliced potatoes and a tomato coconut curry sauce make a great midweek meal.

Curry seems to be one of those flavors that people feel very strongly about. They either love it or they hate it, there’s not much middle ground. I’m in the “love it” camp.  Just the smell of curry makes my heart flutter.

A long, long time ago in a city far, far away when I was in culinary school, we would wander the streets of NYC and more often than not we ended up in an area of Manhattan that had lots of spice shops and Indian restaurants. I think that’s where my love of curry was born.

Healthy Granola Recipe with Coconut

February 2, 2019

My healthy granola recipe is made with coconut oil, two types of coconut and almonds. It is good enough to eat on its own, which I do fairly often, but I love it sprinkled on top of yogurt for a little crunch. This granola will last for weeks or even months in an airtight container, but I guarantee it will disappear before you have a chance to find out.sheet pan with coconut almond granola

There is no comparison between homemade and store-bought granola.  If you’ve never made your own healthy granola before, this is a great place to start. The recipe is very easy and made with ingredients most of us already have in the pantry.

Ice Cream Social

August 9, 2011

Every summer when I was a kid, our church held an ice-cream social.  I know it may sound a bit “Little House on the Prairie”,  but it really was fun and coincidentally since L.H. is my favorite show of all time, quite fitting I suppose.

It was worth sitting outside in the sweltering heat and oppressive humidity of Midwestern summers… ice cream melting down my hand,  a sweet & sticky mess and completely content.

In the fall,  it was fresh-pressed hot apple cider and cake donuts which were also swoon-worthy, but more on that another time.

The ice cream socials were the highlight of the summer church events.  We would eat as much ice cream as we could get away with until we were nearly in a sugar coma.  If given the opportunity,  I could would still eat ice cream ad nauseam.

I don’t just have a sweet tooth, I have an entire set.

Strangely I don’t normally like desserts that are cloyingly sweet,  I like them to bring a little something else to the table beyond pure sugar.

While I do border on needing a program for my insatiable sweet tooth  (Hello. My name is Cheryl.  I have a problem with sugar…)  My Achilles heal is ice cream.
